A quick and simple recipe for pan-fried eggs cooked with fresh green onions, offering a flavorful and satisfying breakfast or light meal in just 10 minutes.

  • Total Time: 10 minutes
  • Yield: 1 serving

Ingredients

Vegetables

  • 6-10 Green Onions (aka Spring Onions)

Others

  • 1-2 Tablespoons Oil or Butter
  • 1/8 Teaspoon Salt
  • 1/8 Teaspoon Black Pepper
  • 2 Eggs

Instructions

  1. Prepare the Green Onions: Rinse the green onions thoroughly to remove any dirt trapped between the stalk junctions and trim off any bad or wilted parts.
  2. Cut the Green Onions: Trim the ends, separate the bulbs from the green stalks, slice the bulbs thinly, and cut the green stalks into approximately 1 inch (2 cm) long pieces.
  3. Heat the Skillet: Place a skillet on medium-high heat and add the oil or butter. Allow it to heat until warm but not smoking.
  4. Cook the Green Onions: Add the sliced green onion bulbs and stalk pieces to the skillet. Fry them over medium to high heat, stirring occasionally to cook evenly.
  5. Season the Onions: Sprinkle salt and black pepper over the green onions to enhance their flavor while cooking.
  6. Create Space for Eggs: Once the onions are halfway cooked and softened, push them to the side of the pan, creating a space in the center to cook the eggs. Reduce the heat slightly to medium.
  7. Add the Eggs: Crack the eggs into the center of the skillet among the cooked green onions. Maintain medium heat so the eggs cook through gently.
  8. Cook to Preference: Fry the eggs to your liking—whether sunny side up, over easy, or fully cooked. Season the eggs with a pinch of salt and black pepper as desired.
  9. Serve Hot: Once the eggs are done, plate the eggs with the sautéed green onions and serve immediately while hot.

Notes

  • You can adjust the amount of oil or butter depending on your preference for richness.
  • If you prefer, substitute green onions with shallots or chives for a slightly different flavor.
  • To make it a heartier meal, serve with toasted bread or alongside sautéed vegetables.
  • Use fresh, crisp green onions for the best flavor and texture.
  • Maintain medium heat to avoid overcooking or burning the eggs and onions.
