These Sesame Noodle Bowls are a quick and flavorful 15-minute meal prep option perfect for busy weekdays. Featuring a creamy sesame sauce, tender noodles, fresh vegetables, and optional diced chicken, this dish can be enjoyed hot or cold and stores well for easy lunches or dinners throughout the week.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Sesame Sauce

  • 1/4 cup sesame paste (or tahini)
  • 1/4 cup warm water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, grated

Main Ingredients

  • 6-8 ounces stir fry noodles, Chinese egg noodles, or linguine
  • 2 cups edamame, cooked
  • 2 cucumbers, diced
  • 1 lb. chicken breast, cooked and diced (optional)
  • Sesame seeds, for garnish

Instructions

  1. Prepare the Sauce: Whisk together sesame paste, warm water, soy sauce, sesame oil, rice vinegar, and grated garlic until smooth. Alternatively, blend in a food processor or shake in a jar for ease.
  2. Cook the Noodles: Boil noodles according to package directions but shorten the cooking time by a few minutes to keep them firm. If the noodles are sticky, rinse briefly under cold water to separate. Toss with about half of the prepared sesame sauce to coat evenly.
  3. Assemble the Bowls: Divide the noodles into four meal prep containers. Add cooked edamame, diced cucumber, and diced chicken (if using) to each container. Drizzle with remaining sesame sauce and sprinkle generously with sesame seeds.
  4. Storage and Serving: Store the bowls in the refrigerator for 3-4 days. Enjoy them chilled or warmed, perfect for grab-and-go meals. Don't forget to snap a photo before eating!

Notes

  • You can substitute chicken breast with tofu or tempeh to keep this recipe vegetarian.
  • Adjust soy sauce quantity depending on your preferred saltiness.
  • For a spicier kick, add chili flakes or a dash of sriracha to the sauce.
  • Use any preferred noodles such as rice noodles or soba if avoiding gluten, but adjust cooking times accordingly.
  • Edamame can be fresh or frozen; if frozen, thaw before assembling.
