Ingredients
Salmon
- 8 oz. sushi grade salmon
Dressing
- 2 Tbsp. soy sauce or tamari (use tamari to make gluten free)
- 1 Tablespoon lemon juice
- 1 ½ teaspoons white miso paste
- 1 teaspoon yuzu juice
Garnishes
- 1 small shallot, thinly sliced
- 1 Tablespoon coarsely chopped cilantro
- ½ jalapeno pepper, sliced in half lengthwise, then thinly sliced with seeds removed
- 1 teaspoon lemon zest
- 1 teaspoon sesame seeds
- 2 teaspoons chili crisp oil
- Flakey sea salt (optional, to taste)
- Fresh cracked black pepper (optional, to taste)
Instructions
- Prep Garnishes: Prepare all the garnishes by thinly slicing the shallot, halving and then thinly slicing the jalapeno with seeds removed, coarsely chopping the cilantro, and zesting the lemon. Set these aside for later use.
- Make Dressing: In a small bowl, whisk together the soy sauce or tamari, lemon juice, white miso paste, and yuzu juice until well combined. Set the dressing aside to let the flavors meld.
- Slice Salmon: Gently slice the sushi-grade salmon against the grain into thin pieces. If the salmon is too soft and does not slice easily, place it in the freezer for 15-20 minutes to firm up, then slice thinly.
- Arrange Salmon: Lay out the thin salmon slices in a circular pattern on a serving plate, creating an attractive presentation.
- Dress and Garnish: Pour the citrus soy dressing evenly over the salmon slices, ensuring thorough coverage. Sprinkle the thinly sliced shallots, chopped cilantro, jalapeno slices, lemon zest, and sesame seeds over the salmon. Drizzle the chili crisp oil evenly on top for a subtle spicy kick.
- Season and Serve: Optionally, add flakey sea salt and fresh cracked black pepper to taste. Serve immediately using chopsticks for an authentic experience.
Notes
- Use sushi-grade salmon from a trusted source for safety and best flavor.
- If you want to make the dish gluten-free, use tamari instead of regular soy sauce.
- Adjust chili crisp oil quantity based on your preferred level of spiciness.
- Serve the crudo immediately after dressing to maintain freshness and optimal texture.
- If you don’t have yuzu juice, a small splash of lime juice can be a substitute though it changes the flavor slightly.
