  • 1 tablespoon olive oil
  • 1 cup breadcrumbs (panko or Italian style)
  • 1 large egg
  • 1 tablespoon tomato paste or ketchup

Instructions

  1. Prepare the herb and onion mixture: Finely chop the yellow onion and fresh parsley either by hand or using a small food processor until finely minced.
  2. Combine ingredients: In a large mixing bowl, add the ground chicken, chopped onion and parsley mixture, minced garlic, onion powder, garlic powder, paprika, coriander powder, cumin powder, salt, black pepper, olive oil, breadcrumbs, egg, and tomato paste or ketchup. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the koftas: Form the mixture into desired shapes. You can make traditional log-shaped koftas, ideal for grilling, or small circular patties, which work better for pan-frying.
  4. Cook the koftas: Heat 1-2 tablespoons of oil in either a cast iron grill pan or a non-stick frying pan over medium heat. Place the koftas in the pan or on the grill and cook for 2-3 minutes per side until they develop a light golden brown color. Flip carefully and cook the other side for another 2-3 minutes. Cover with a lid and cook for an additional 1-2 minutes to ensure they are cooked through. Test doneness by breaking a piece to check for no pink inside.
  5. Serve: Remove the koftas from the pan and serve immediately. Pair them with fresh chopped vegetables like onions, parsley, and tomato, enjoy in sandwiches, or serve alongside your favorite salad.
