Ingredients
Main Ingredients
- 1 1/2 cups (360g) apple puree
- 1 cup (100g) finely chopped apples (1/8 inch cubes)
- 2 cups (252g) whole wheat pastry flour or golden wheat flour
- 4 tsp (12g) aluminum free baking powder
- 2-3 tbsp (30-45ml) maple syrup
- Optional: Avocado oil for brushing
Instructions
- Prepare Cooking Equipment: For air fryer, line the insert with parchment paper. For oven baking, preheat the oven to 400°F (200°C) and place a cast iron skillet or metal baking dish filled halfway with water on the bottom rack. Line a large baking sheet with parchment paper.
- Make Apple Puree: If not using store-bought, add about 380g (3 1/2 cups) peeled, large cubed apples to a blender and blend until smooth with a grainy applesauce-like texture. Measure out 1 1/2 cups (360g) of the puree.
- Combine Dry Ingredients: In a large bowl, whisk together the whole wheat pastry flour and aluminum free baking powder until evenly mixed.
- Mix Batter: Add the apple puree and maple syrup to the dry ingredients and stir with a spatula until a thick batter forms and all flour is incorporated. Fold in the finely chopped apples evenly.
- Form Fritters: Using a 1/3 cup measuring cup, scoop batter onto the prepared parchment, spacing fritters 1.5 inches apart. Gently spread each mound into a 2½ to 3-inch circle if necessary. Optionally, brush the tops lightly with avocado oil for a golden, crisp finish.
- Cook Fritters: For oven: place the baking sheet on the rack above the water pan and bake for about 20 minutes until puffed and cooked through, then broil for 1–2 minutes until golden and crisp. For air fryer: preheat to 400°F (200°C) and cook fritters for 8-10 minutes until golden and cooked through.
- Cool and Serve: Let fritters cool slightly before serving. They are best enjoyed warm. Optionally dust with powdered sweetener or serve with a glaze.
- Storage: Store leftover fritters in an airtight container in the refrigerator or freezer for later enjoyment.
Notes
- The apple puree can be homemade or store-bought but should have a grainy texture rather than totally smooth.
- You can use either whole wheat pastry flour or golden wheat flour based on preference.
- Brushing with avocado oil is optional but gives a more golden and crispy texture.
- For a sweeter touch, dust fritters with powdered sweetener or drizzle a glaze before serving.
- Fritters are best eaten fresh but can be refrigerated or frozen for convenience.
