Ingredients
Cookies
- 1 cup (97g) quick oats
- 1/2 cup (128g) natural peanut butter with no added oils
- 3 tbsp (1.5 fl oz / 44 ml) maple syrup, or more as needed to taste
- 1/4 cup (19g) finely shredded carrots, lightly patted dry with paper towel
Instructions
- Prepare the baking sheet: Line a small baking sheet with parchment paper and set aside to prevent the cookies from sticking and for easy transfer after shaping.
- Mix ingredients: In a large mixing bowl, combine the quick oats, natural peanut butter, maple syrup, and finely shredded carrots. Use a spatula to mix thoroughly until the mixture is evenly combined and has a thick, cookie dough-like consistency. Taste and adjust sweetness if needed by adding more maple syrup. If the mixture is too sticky, add more oats; if too dry, add more peanut butter or maple syrup.
- Shape the cookies: Using a 1.5 tablespoon cookie scoop, portion out the dough. Roll each scoop between your palms to form smooth balls, then place them on the prepared baking sheet. Press each ball gently with the palm of your hand to form a round, smooth disk about 3/8 to 1/2 inch thick. Smooth edges and reshape as needed to achieve a neat cookie shape.
- Chill to set: Place the shaped cookies in the refrigerator for 30 to 60 minutes. This chilling step firms up the cookies, making them easier to handle and eat. Store leftover cookies in an airtight container in the fridge. Optionally, add frosting before serving for extra flavor.
Notes
- Ensure the shredded carrots are finely shredded and patted dry to avoid excess moisture that can make the dough too wet.
- The cookies won’t bake or harden like traditional cookies but will become firmer after chilling.
- You can add mix-ins such as raisins, nuts, or chocolate chips if desired, adjusting the moisture accordingly.
- Store uneaten cookies in the refrigerator in an airtight container to maintain freshness.
- For vegan variation, use maple syrup and peanut butter without any animal products.
