Ingredients
Cookies
- 1 cup creamy peanut butter
- 2/3 cup coconut sugar
- 1 tsp vanilla extract
- 1 large egg
Chocolate Drizzle
- 1 cup dark chocolate, melted
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
- Mix the Ingredients: In a large mixing bowl, combine the creamy peanut butter, coconut sugar, vanilla extract, and egg. Use a rubber spatula or large spoon to mix until all ingredients are fully combined into a smooth dough.
- Roll the Dough: Portion the dough using a cookie scoop or by hand to create approximately 2-inch diameter balls. Place the dough balls evenly on a baking sheet lined with parchment paper.
- Press with Fork: Flatten each dough ball slightly by pressing the back of a fork onto each cookie to create a criss-cross pattern. This also helps flatten the cookies for even baking.
- Bake: Bake the cookies in the preheated oven for 8 minutes until they are set but still soft.
- Melt Dark Chocolate: While the cookies bake, melt the dark chocolate. You can use a double boiler or microwave the chocolate in 30-second intervals, stirring between intervals to prevent burning.
- Decorate: After baking, drizzle the melted dark chocolate over the cookies. Allow the chocolate to solidify by letting the cookies cool at room temperature or placing them briefly in the refrigerator.
- Enjoy: Once the chocolate has hardened, the cookies are ready to be enjoyed.
Notes
- Use creamy peanut butter for the best texture and binding.
- Be careful not to overbake; cookies should remain soft and chewy.
- To speed up chocolate hardening, place cookies in the fridge after drizzling.
- Cookies can be stored in an airtight container at room temperature for up to 5 days.
- Optionally, you can omit the chocolate for a simpler cookie variation.
