Ingredients
Egg Mixture
- 2 large eggs
- 2 Tablespoons milk
- Salt, to taste
- Pepper, to taste
Fillings
- ½ Cup shredded cheddar cheese
- 2 breakfast sausage patties
Assembly
- 6 sheets egg roll wrappers
- 1 Tablespoon olive oil (for brushing and cooking)
- Water (for sealing wrappers)
Instructions
- Prep: Gather all ingredients and prepare to cook the sausage and eggs.
- Cook Sausage: In a small skillet over medium heat, cook the breakfast sausage patties according to package instructions until fully cooked. Remove from pan and chop into bite-sized pieces.
- Make Scrambled Eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Add a teaspoon of oil or a small pat of butter to the skillet over medium-low heat. Pour in the egg mixture and cook, stirring occasionally, until scrambled and mostly set. Stir in the chopped sausage, then remove from heat and set aside.
- Assemble Egg Rolls: Lay an egg roll wrapper on a clean surface with points facing in a diamond shape. Place about 1 tablespoon of shredded cheddar cheese on the bottom third of the wrapper, then spoon some of the egg and sausage mixture on top. Using a finger or pastry brush, moisten all edges of the wrapper with water to help seal it.
- Roll Egg Rolls: Fold the bottom point over the filling tightly, fold in the sides to create an envelope shape, then fold the top point over the entire wrapper, sealing it completely. Place the sealed side down and repeat with remaining wrappers and filling.
- Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Air Fry Egg Rolls: Lightly brush the egg rolls with olive oil or spray with oil mist. Place them in the preheated air fryer basket in a single layer.
- Cook: Air fry at 400°F for 8 minutes total. At the 5-minute mark, carefully flip the egg rolls over to ensure even crisping. Continue cooking for another 3 minutes until golden and crispy.
- Serve: Remove the egg rolls from the air fryer and serve warm as a tasty breakfast treat.
Notes
- If you prefer, you can substitute breakfast sausage with turkey sausage or a vegetarian alternative.
- For extra flavor, consider adding chopped green onions or diced bell peppers to the egg mixture.
- Keep the egg rolls sealed tightly to prevent filling leakage during air frying.
- If your air fryer basket is small, cook the egg rolls in batches to avoid overcrowding.
- Store any leftovers in an airtight container and reheat in the air fryer for best crispness.
