Ingredients
Filling
- 4 ounces cream cheese (softened to room temperature)
- ⅓ cup salsa
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- 4 ounces shredded Mexican cheese blend (or Monterey Jack or cheddar, about 1 cup)
- 2 cups shredded cooked chicken
Other
- 12 corn tortillas (or small flour tortillas)
- Olive oil or avocado oil cooking spray
- For serving: salsa, guacamole, sour cream, etc.
Instructions
- Prepare the filling: In a large bowl, combine the softened cream cheese, salsa, chili powder, cumin, garlic powder, and salt. Stir until smooth and well blended. Add the shredded cheese and shredded cooked chicken, then mix everything thoroughly to combine the filling evenly.
- Preheat the air fryer: Set your air fryer to 400°F (204°C) and allow it to preheat while you prepare the tortillas and filling.
- Warm the tortillas: Working with 4-6 tortillas at a time, place them between two paper towels and microwave for about 20-30 seconds to soften. This makes them pliable and easier to roll without tearing.
- Roll the taquitos: Take one softened tortilla and place about 2 tablespoons of the chicken filling in a line across the lower third of it. Roll the tortilla tightly around the filling and place it seam side down on a parchment-lined surface. Repeat with the remaining tortillas and filling.
- Spray taquitos with oil: Lightly spray each rolled taquito all over with olive oil or avocado oil cooking spray. This helps them crisp up nicely in the air fryer.
- Air fry the taquitos: Arrange the taquitos seam side down in the air fryer basket, leaving space between each for even cooking. Work in batches if needed. Cook at 400°F for 5 minutes, then flip them over carefully and cook for an additional 2-3 minutes until they are golden brown and crispy.
- Serve: Remove the taquitos from the air fryer and serve warm with salsa, guacamole, sour cream, or your favorite dipping sauces.
Notes
- Warming the tortillas before rolling helps prevent cracking or tearing.
- You can substitute shredded rotisserie chicken or leftover cooked chicken.
- Feel free to add extra spices or hot sauce to the filling to suit your taste.
- For best crispiness, avoid overcrowding the air fryer basket.
- Leftover taquitos can be reheated in the air fryer at 350°F for 3-4 minutes.
