Ingredients
Chicken Skewers
- 1 1/2 lbs boneless skinless chicken thighs, cut into 2 inch pieces
- 1 1/2 Tbsp garlic and herb seasoning
- 1 Tbsp olive oil
- 6 skewers (metal or bamboo)
Garlic Parmesan Butter
- 1/2 cup unsalted butter, softened to room temperature
- 4 cloves garlic, minced or grated
- 1 Tbsp garlic and herb seasoning
- 1/2 tsp kosher salt
- 1/3 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions
- Prepare skewers. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, ensure they fit comfortably in your air fryer basket. You can also cut smaller bamboo skewers to size if needed.
- Season chicken. Place the chicken pieces in a large mixing bowl. Drizzle with olive oil and toss to combine thoroughly. Sprinkle garlic and herb seasoning over the chicken and massage it in using your hands, spatula, or tongs until the pieces are evenly coated.
- Thread chicken onto skewers. Skewer about 7-8 pieces of seasoned chicken per skewer and place the skewers on a plate, ready for cooking.
- Preheat air fryer. Preheat your air fryer to 400°F (204°C) for a few minutes to ensure even cooking.
- Air fry chicken (first side). Arrange the skewers in the air fryer basket in a single layer with space between them. Air fry for 8 minutes.
- Make garlic parmesan butter. While the chicken cooks, combine softened butter, minced garlic, garlic and herb seasoning, kosher salt, chopped parsley, and grated Parmesan cheese in a small bowl. Mix until well blended.
- Flip and brush chicken. After the first 8 minutes, use tongs to turn each skewer over. Generously brush the exposed side with the prepared garlic parmesan butter.
- Continue air frying. Resume cooking the skewers for an additional 7 minutes or until the chicken reaches an internal temperature of 165°F (74°C), ensuring it is fully cooked and juicy.
- Final brush and serve. Once cooked, flip the skewers again and brush the other side with more garlic parmesan butter. Serve the skewers hot with extra garlic butter on the side for dipping or additional flavor.
Notes
- Soaking bamboo skewers prevents them from burning in the air fryer.
- Ensure chicken pieces are uniform in size for even cooking.
- Use a meat thermometer to check that the chicken is cooked through to an internal temperature of 165°F (74°C).
- Leftover garlic butter can be refrigerated and used on vegetables or bread.
- If cooking in batches, keep finished skewers warm in a low oven (about 200°F) while you finish the remaining skewers.
