Ingredients
Filling
- 1 pound cooked boneless, skinless chicken breasts, cut into small chunks
- 1/3 cup corn (frozen or fresh)
- 1/3 cup finely chopped red bell pepper
- 1/4 cup sliced green onion
- 1 cup black beans, drained and rinsed
- 1 cup fresh spinach, coarsely chopped
- 2 cups shredded Mexican blend cheese
Spices
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon onion powder
Others
- 1 package egg roll wrappers
- Nonstick olive oil cooking spray
- Water (for sealing wrappers)
Instructions
- Prepare the air fryer basket: Spray a 5-quart air fryer basket thoroughly with nonstick olive oil cooking spray to prevent sticking. Set aside.
- Mix the filling: In a large bowl, combine the cooked chicken chunks, corn, finely chopped red bell pepper, sliced green onion, rinsed black beans, chopped spinach, and shredded Mexican blend cheese. Stir everything together until well mixed.
- Season the filling: In a small separate bowl, whisk together chili powder, garlic powder, salt, ground cumin, paprika, and onion powder. Sprinkle this spice mix evenly over the chicken and vegetable mixture, then stir well to evenly coat all ingredients.
- Prepare wrappers and filling: Pour some water into a small bowl to use for sealing the egg roll wrappers. Lay one egg roll wrapper on a clean, flat surface in a diamond shape with a point facing you. Use a 1/3 cup measure to scoop filling onto the center of the wrapper.
- Roll the egg rolls: Fold the bottom point over the filling, tucking slightly under it, then fold the left and right points inward over the filling. Moisten the top edge of the wrapper with water to seal, then roll tightly to close the egg roll securely.
- Spray egg rolls with oil: Lightly spray the top and sides of each rolled egg roll with nonstick olive oil cooking spray to promote even crisping during air frying.
- Air fry the egg rolls: Place the egg rolls in the prepped air fryer basket with the sealed side down. Leave at least 1/2 inch to 1 inch of space between each to ensure crisping. Cook at 375°F for 5 minutes, then carefully flip each egg roll and cook for an additional 5 minutes, spraying the newly exposed sides with cooking spray before closing the air fryer basket.
- Serve: Remove from the air fryer once golden and crisp. Serve warm with your favorite dipping sauce for a tasty appetizer or snack.
Notes
- Do not overcrowd the air fryer basket; cook in batches if needed for best results.
- You can use fresh or frozen corn, but thaw frozen corn before use.
- Use a pastry brush or your fingers to brush water on the wrappers for easier sealing.
- Ensure the egg rolls are sealed tightly to prevent filling from leaking during cooking.
- Leftover egg rolls can be refrigerated and reheated in the air fryer for crispness.
- This recipe can be made vegetarian by substituting chicken with additional beans or vegetables.
