Ingredients
Pie Crust
- 1 unbaked pie crust (½ of my recipe)
Filling and Topping
- 1 1/2 cups (212g) all-purpose flour
- 3/4 cup (150g) brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 6 Tablespoons cold salted butter
- 3/4 cup hot water
- 3/4 teaspoon baking soda
- 3/4 cup (227g) unsulphured molasses (not blackstrap molasses)
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven and prepare crust: Preheat your oven to 425℉ (220℃). Roll out the pie crust on a floured surface and gently press it into a 9-inch pie plate. Crimp the edges neatly and place the crust in the refrigerator to chill while you prepare the filling.
- Make crumb topping: In a food processor, combine the flour, brown sugar, cinnamon, nutmeg, and salt. Add cold salted butter cut into pieces and pulse until the mixture resembles coarse crumbs. Set aside.
- Prepare molasses filling: In a bowl, dissolve the baking soda in the hot water. Whisk in the molasses and vanilla extract until fully combined and smooth.
- Assemble the pie: Pour the molasses mixture evenly into the chilled pie crust. Then sprinkle the crumb topping evenly over the molasses mixture, ensuring coverage all the way to the edges of the crust for a uniform topping.
- Bake the pie: Bake the pie in the preheated oven at 425℉ (220℃) for 15 minutes. Then reduce the temperature to 350℉ (175℃) and continue baking for an additional 22 to 28 minutes. The center of the pie might be slightly jiggly but will set as it cools.
- Cool and serve: Allow the pie to cool completely on a wire rack, approximately 2 hours. Serve topped with whipped cream or ice cream if desired for a delicious finishing touch.
Notes
- Use unsulphured molasses for a milder, sweeter flavor rather than blackstrap molasses, which is more bitter.
- Chilling the crust before baking helps maintain a flaky texture.
- The crumb topping can be made in a food processor or by hand with a pastry cutter.
- The pie center will be slightly jiggly when done but will firm up as it cools.
- For best flavor, allow the pie to cool fully to let the filling set properly.
- Shoofly pie is traditionally served with whipped cream or vanilla ice cream to complement the molasses richness.
