Ingredients
Pancakes
- 2 cups (240 g) all purpose flour
- ¼ cup (50 g) sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ¼ cup (60 ml) oil
- 1½ cups (300 ml) milk
- 1 medium apple, peeled, cored and shredded
Apple Topping
- 2 apples, peeled, cored and diced
- 2 tablespoons unsalted butter
- 2 tablespoons (25 g) sugar
- 1 teaspoon ground cinnamon
- ¼ cup (60 ml) maple syrup
Instructions
- Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, ground cinnamon, baking powder, baking soda, and salt until well combined. Set this mixture aside.
- Prepare Wet Ingredients and Batter: In another bowl, whisk the eggs until smooth. Add the oil and milk, whisking until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined; it's okay if the batter is a bit lumpy. Gently fold in the shredded apple, taking care not to overmix.
- Heat Skillet and Test: Heat a non-stick skillet or griddle over low to medium heat. Test the skillet by dropping a small amount of batter onto it. Melt a little butter, coconut oil, or preferred oil on the skillet to prevent sticking.
- Cook Pancakes: Using a ¼ cup measuring cup, pour the batter onto the heated skillet. Cook for about 3 to 4 minutes until bubbles form on the surface and do not pop immediately. Flip the pancakes and cook for an additional 2 to 3 minutes until golden brown and cooked through.
- Prepare Apple Topping: While pancakes cook, peel, core, and dice 2 apples. In a saucepan, combine the diced apples, butter, sugar, and ground cinnamon. Cook over medium heat for 3 to 5 minutes, stirring occasionally, until the apples are softened to your liking. Remove from heat and stir in the maple syrup.
- Serve: Transfer cooked pancakes to a plate or cooling rack. Continue cooking remaining batter. Serve pancakes topped generously with the warm apple topping and extra maple syrup if desired.
Notes
- Do not overmix the batter; lumps are okay and prevent tough pancakes.
- Adjust heat as needed to prevent burning pancakes before they are cooked through.
- Use a non-stick pan or griddle for best results and easy flipping.
- The apple topping can be made ahead and gently reheated before serving.
- For a healthier option, use whole wheat flour in place of all-purpose flour, but texture will be denser.
