Ingredients
Dry Ingredients
- 2 cups All-Purpose Flour
- 1 Tbsp. sugar
- 3 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1 tsp. salt
Wet Ingredients
- 2 large eggs (whites and yolks separated)
- 1 cup milk
- 1/2 cup Low-fat FAGE BestSelf Plain Greek yogurt
- 1/4 cup melted butter
- 1 tsp. vanilla extract
Sautéed Apples
- 2 apples (Granny Smith, PinkLady, or your favorite apples), small diced
- 2 Tbsp. water
- 2 Tbsp. butter
- 2 Tbsp. brown sugar
- 1 tsp. maple syrup
- 1/2 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1 pinch salt
Instructions
- Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt, stirring well to evenly distribute all ingredients.
- Separate Eggs: Carefully separate the egg yolks from the whites, placing them into separate bowls.
- Combine Wet Ingredients: In a medium bowl, whisk together the egg yolks, Greek yogurt, vanilla extract, milk, and melted butter until smooth and fully combined.
- Make Batter: Gently fold the dry ingredients into the wet mixture, mixing just until combined to avoid overworking the batter.
- Beat Egg Whites: Using a hand mixer, beat the egg whites until soft peaks form, adding airiness to the pancakes.
- Fold in Egg Whites: Carefully fold the beaten egg whites into the batter, preserving the light texture.
- Cook Pancakes: Heat a griddle or non-stick pan over medium heat until warm. Add a small pat of butter and let it melt evenly. Scoop 1/4 cup of batter for each pancake onto the pan. Cook until bubbles form on the surface, then flip and cook for a few more minutes until golden and cooked through. Repeat with remaining batter, adding more butter as needed.
- Prepare Sautéed Apples: In a small frying pan over medium heat, add diced apples and water. Cover with a lid and steam for 3-4 minutes until slightly softened. Remove lid and add butter, brown sugar, maple syrup, cinnamon, nutmeg, and salt. Stir and cook until apples reach your desired tenderness and glaze is thickened.
- Serve: Top pancakes with the warm sautéed apples, additional yogurt, and a sprinkle of cinnamon if desired. Enjoy immediately for best flavor and texture.
Notes
- Use firm apples like Granny Smith or PinkLady for best texture in sautéed topping.
- Separating and beating egg whites adds extra fluffiness to pancakes.
- Do not overmix the batter to keep pancakes tender.
- Keep cooked pancakes warm by placing them on a baking sheet in a low oven while cooking the rest.
- These pancakes freeze well; reheat gently in a toaster or oven.
