These homemade Apple Fritters with pecans are a bakery-style breakfast treat, perfect for a cozy autumn morning. Crispy on the outside, soft on the inside, and topped with a sweet glaze.

  • Total Time: 35 minutes
  • Yield: 10 fritters

Ingredients

  • 1 1/3 cups (175 grams) all-purpose flour, spooned and leveled
  • 2 tablespoons brown sugar
  • 1/2 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 1/3 cup (80 ml) milk
  • 3 cups (320 grams) apples, peeled, cored, and chopped into 1/2-inch pieces
  • 1/4 cup (30 grams) chopped pecans
  • Vegetable oil for frying
  • Glaze: 1.5 cups (170 grams) powdered sugar
  • 1/4 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 2–5 tablespoons milk
  • 2 tablespoons maple syrup (optional)

Instructions

  1. In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together eggs and milk.
  3. Pour wet ingredients into the dry ingredients and mix until combined.
  4. Fold in apples and pecans until fully incorporated. The batter will mostly coat the apples.
  5. Heat about 2 inches (5 cm) of vegetable oil in a small pot to 360-375°F (180-190°C). Test with a pinch of flour; it should bubble if the oil is ready.
  6. Place about 1/4 cup of batter on a spatula and slide into hot oil. Fry until golden brown, about 2-3 minutes per side. Repeat with remaining batter.
  7. Remove fritters with a slotted spoon and place on paper towels to drain excess oil.
  8. To make glaze, combine powdered sugar, salt, vanilla extract, and maple syrup (if using). Add milk one tablespoon at a time until smooth and desired consistency is reached.
  9. Once fritters are cool enough to handle, dip in glaze or drizzle over the top. Serve immediately.

Notes

  • Test the first fritter to ensure oil temperature is correct; adjust heat as needed.
  • Use a slotted spoon to remove fritters to avoid excess oil.
  • Fritters are best enjoyed fresh but can be reheated briefly in the oven or air fryer.
