Delight in these Apple Pie Cookie Cups, a perfect blend of soft oatmeal cookie shells filled with warm, spiced apple pie filling. Combining the comforting flavors of traditional apple pie with the ease and fun of handheld cookie cups, this recipe is perfect for parties, dessert, or a cozy treat any time.

  • Total Time: 1 hour 15 minutes
  • Yield: 20 servings

Ingredients

Oatmeal Cookie Cups

  • 1 cup unsalted butter (softened)
  • 3/4 cup white sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups rolled oats

Apple Pie Filling

  • 5 large Granny Smith apples (peeled & chopped into thin bite-sized pieces)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 2 tablespoons unsalted butter
  • 1/2 cup water

Instructions

  1. Preheat Oven and Prepare Muffin Trays: Preheat your oven to 325°F. Lightly grease two muffin trays with non-stick cooking spray to ensure the cookie cups won't stick.
  2. Make Cookie Dough Base: In a large bowl, beat the softened butter with white and brown sugar until fluffy, about 2 minutes. Then beat in eggs and vanilla extract until combined.
  3. Incorporate Dry Ingredients: On low mixer speed, gradually beat in flour, cinnamon, baking powder, and salt. After this, mix in rolled oats to complete the dough.
  4. Form Cookie Cups: Spoon approximately 3 tablespoons of dough into each muffin cavity. Press the dough down and up the sides to form bowl shapes. If dough is sticky, chill for 15-20 minutes.
  5. Bake Cookie Cups: Bake for 15-18 minutes or until edges start to turn golden. The centers may puff up slightly, which is normal.
  6. Reshape Cookie Cups: Remove from oven. Lightly grease a spoon or shot glass bottom and press it into each cup to re-form the bowl shape. Use a thin sharp knife to trace around edges to loosen cups.
  7. Cool and Remove Cookies: Let cookie cups cool for about 20 minutes then carefully pry them out of the muffin tins with a thin knife.
  8. Prepare Apple Pie Filling: Toss chopped apples with white sugar, brown sugar, cinnamon, nutmeg, and cornstarch in a large bowl.
  9. Cook Apple Filling: Melt butter in a large saucepan over medium heat. Add apple mixture and stir gently. Pour in water as apples start to bake. Cook for 5-10 minutes until apples soften and mixture caramelizes.
  10. Assemble Cookie Cups: Spoon warm apple pie filling into each cooled oatmeal cookie cup.
  11. Serve: Enjoy warm or at room temperature. For extra warmth, microwave cups for about 20 seconds before serving.

Notes

  • If the cookie dough is too sticky to handle, refrigerate it for 15-20 minutes to make shaping easier.
  • You can use different apple varieties for varied flavor and sweetness, though Granny Smith apples provide a nice tart contrast.
  • Cookies can be stored in an airtight container at room temperature for up to 3 days.
  • Reheat assembled cookie cups gently in the microwave for about 20 seconds to enjoy a warm dessert sensation.
  • Ensure to grease muffin pans well to prevent cookie cups from sticking when removing.
