A fresh and crunchy Apple Slaw combining shredded cabbage, sweet gala apples, crunchy almonds, and tart cranberries, all tossed in a creamy and tangy Greek yogurt-based dressing. Perfect as a vibrant side dish for BBQs, parties, or picnics.

  • Total Time: 10 minutes
  • Yield: 8 servings

Ingredients

Dressing

  • 3/4 cup plain Greek Yogurt (preferably Fage for thickness)
  • 1/4 cup mayonnaise
  • 1/4 cup honey
  • 2 Tbsp apple cider vinegar
  • Salt and freshly ground black pepper, to taste

Coleslaw

  • 1 small cabbage, shredded (6 - 7 cups packed, about 16 oz chopped)
  • 1 1/2 cups matchstick carrots
  • 2 large gala apples, sliced into matchsticks (about 3 cups)
  • 1/2 cup sliced green onions
  • 3/4 cup sliced almonds
  • 3/4 cup dried cranberries
  • 3/4 cup crumbled feta cheese, blue cheese, or shredded sharp cheddar (optional)

Instructions

  1. Make the dressing: In a mixing bowl, whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth and well combined. Season with salt and freshly ground black pepper to taste, adjusting the seasoning for a balanced sweet and tangy flavor.
  2. Prepare the coleslaw base: In a large bowl, combine the shredded cabbage, matchstick carrots, gala apple matchsticks, sliced green onions, sliced almonds, dried cranberries, and the optional cheese if using. Toss gently to mix all ingredients evenly.
  3. Combine and toss: Pour the prepared dressing over the cabbage mixture. Toss the slaw thoroughly until every ingredient is evenly coated with the dressing.
  4. Serve fresh: For best flavor and texture, serve the apple slaw within a few hours of preparation. It can be refrigerated before serving to keep crispness and freshness.

Notes

  • Use firm, crisp apples such as Gala to avoid browning and add fresh sweetness.
  • For a dairy-free option, substitute Greek yogurt and mayonnaise with suitable plant-based alternatives.
  • The slaw is best consumed fresh to retain crunchiness; stirring just before serving is recommended if prepared ahead.
  • You may swap almonds for other nuts like pecans or walnuts based on preference.
  • If you prefer a sweeter slaw, adjust honey quantity accordingly.
  • Cheese is optional and can be omitted for a lighter, vegetarian slaw.
