Ingredients
Apple Filling
- 350 g Apples (Granny Smith or Honeycrisp, peeled, cored, and chopped)
- 2 tsp Unsalted butter
- 3 tbsp Brown sugar (light or dark)
- 1 tsp Ground cinnamon
- ½ tsp Cornstarch
- 2 tsp Water (to dissolve cornstarch)
- Pinch of salt
Pastry
- 300 g Sheet puff pastry (thawed)
- 1 tbsp Brown sugar (for inside each pastry)
- 1 small Egg with 1 tbsp of water (for egg wash)
- 1 - 2 tbsp Brown sugar (for sprinkling on top)
Cinnamon Butter Glaze
- 60 g Powdered sugar
- ½ tsp Ground cinnamon
- 1 - 2 tbsp Whole milk (adjust for drizzling consistency)
Instructions
- Make the Apple Filling: In a small saucepan over medium heat, melt the unsalted butter. Add the chopped apples, brown sugar, ground cinnamon, and a pinch of salt. Stir and cook for 4–5 minutes until the apples soften slightly and the mixture becomes syrupy. Mix cornstarch with water to form a slurry, then stir it into the apple mixture. Continue cooking for another 1–2 minutes until the sauce thickens and becomes glossy. Remove from heat and let the filling cool completely, placing it in the fridge for 10–15 minutes to expedite cooling.
- Prepare the Puff Pastry: Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper. Roll out the puff pastry slightly to even out the edges. Cut into squares approximately 4x4 inches (10x10 cm). On one half of each square, sprinkle one teaspoon of brown sugar. Spoon about one tablespoon of the cooled apple filling over the sugar.
- Assemble the Turnovers: Fold the pastry over to form a rectangle or triangle, according to preference. Press the edges gently with your fingers, then seal securely by pressing with a fork. Place the turnovers on the prepared baking sheet. Whisk the egg with water to create an egg wash and brush it over the tops of each turnover. Lightly sprinkle with additional brown sugar for a caramelized finish.
- Bake: Bake the turnovers for 18–22 minutes or until they turn golden brown, puffed, and crisp on top. After baking, allow them to cool slightly before adding the glaze.
- Make the Cinnamon Butter Glaze: In a small bowl, whisk together powdered sugar, ground cinnamon, and whole milk until smooth. Drizzle the glaze over the warm turnovers using a spoon or piping bag. Let the glaze set for a few minutes before serving.
Notes
- Use tart apples like Granny Smith or Honeycrisp for a perfect balance of sweetness and acidity.
- Ensure the puff pastry is thawed but cold to achieve maximum flakiness.
- The cornstarch slurry thickens the apple filling, preventing sogginess inside the turnovers.
- You can make the apple filling ahead of time and store it refrigerated for up to 24 hours.
- For a dairy-free option, substitute butter and milk with plant-based alternatives.
- Leftover turnovers can be reheated in a warm oven to restore crispness.
