Ingredients
Egg Roll Filling
- 1 1/2 cups cooked shredded chicken
- 1/3 cup plain Greek yogurt
- 1/2 cup buffalo sauce (plus more for serving)
- 2 tablespoons chopped fresh chives
- 2 tablespoons dried parsley
- 2 teaspoons dried dill
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Kosher salt, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup crumbled blue cheese
- 20-22 square egg roll wrappers
Cilantro Lime Ranch
- 1 cup sour cream or plain Greek yogurt
- 3/4 cup fresh cilantro, finely chopped
- 1 tablespoon chopped fresh chives
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Juice from 2 limes
Instructions
- Preheat oven and prepare baking sheets: Set your oven to 425°F (220°C). Lightly grease two baking sheets or line them with parchment paper to prevent sticking.
- Make the buffalo chicken filling: In a large mixing bowl, combine shredded chicken, Greek yogurt, buffalo sauce, chopped fresh chives, dried parsley, dried dill, onion powder, garlic powder, and a pinch of kosher salt. Stir well to fully incorporate all the ingredients. Then fold in shredded cheddar cheese and crumbled blue cheese evenly.
- Assemble the egg rolls: Place an egg roll wrapper on a flat surface. Spoon about 2 tablespoons of the buffalo chicken filling onto the center of each wrapper. Lightly brush water around the edges of the wrapper to help seal. Carefully roll the wrapper tightly around the filling, folding in the sides to enclose the filling completely. Place the rolled egg rolls seam-side down on the prepared baking sheets. Lightly brush the top of each egg roll with olive oil to promote crisping during baking.
- Bake the egg rolls: Put the baking sheets in the preheated oven and bake the egg rolls for 10-12 minutes. Then carefully flip each egg roll and continue baking for another 8-10 minutes until the wrappers are golden brown and crisp.
- Prepare the cilantro lime ranch: While the egg rolls bake, combine sour cream or Greek yogurt, finely chopped fresh cilantro, chopped fresh chives, garlic powder, onion powder, and fresh lime juice in a glass jar or bowl. Stir or shake vigorously until the mixture is smooth and creamy.
- Serve: Once egg rolls are golden and crispy, remove them from the oven. Plate them with fresh herbs if desired and serve warm with generous amounts of the cilantro lime ranch and additional buffalo sauce for dipping.
Notes
- For extra crispiness, brush the egg rolls lightly with olive oil before baking.
- Ensure the wrappers are sealed well to prevent filling from leaking during baking.
- You can substitute sour cream with Greek yogurt in the ranch dip for a healthier option.
- Adjust the amount of buffalo sauce to your preferred spice level.
- Use freshly shredded chicken for the best texture and flavor.
- Serve immediately for the crispiest texture; leftovers can be reheated in the oven or air fryer to refresh crispiness.
