Ingredients
Wings
- 5 lbs chicken wings (about 24 wings)
- 2 tablespoons vegetable oil
- 1½ teaspoons kosher salt
- 1 teaspoon ground black pepper
Hot Honey Sauce
- 6 tablespoons hot honey
- ¾ teaspoon lemon juice
- ¾ teaspoon ground black pepper
- 1 tablespoon melted butter
- ¼ cup hot sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
Instructions
- Preheat and prepare wings: Preheat your oven to 300°F. Open the package of chicken wings and use paper towels to pat them dry thoroughly to remove as much water as possible for crispier baking.
- Season and coat wings: Place the dried wings into a large bowl. Add vegetable oil, kosher salt, and ground black pepper, then toss until the wings are evenly coated with the seasoning and oil.
- Prepare baking setup: Line a large, lipped baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the foil-lined sheet.
- Arrange wings on the rack: Spray the wire rack with cooking spray. Arrange the wings in a single layer on the rack ensuring they do not touch for even baking.
- Bake wings in two stages: Bake the wings at 300°F for 30 minutes to render fat and partially cook them. Then increase the oven temperature to 425°F and bake for an additional 30 minutes to crisp the skin.
- Prepare the hot honey sauce: While the wings bake, combine the hot honey, lemon juice, ground black pepper, melted butter, hot sauce, apple cider vinegar, and honey in a small saucepan. Heat gently until the sauce is slightly reduced and hot, stirring occasionally.
- Toss wings in sauce and serve: Remove the baked wings from the oven and transfer them to a clean bowl. Pour the hot honey sauce over the wings and toss thoroughly to coat all pieces. Serve immediately for the best flavor and texture.
Notes
- Patting the wings dry before baking is crucial for crispiness.
- Using a wire rack during baking helps air circulate around the wings for even cooking.
- The two-stage baking method ensures tender, juicy meat and crispy skin.
- Adjust the hot sauce quantity in the sauce to control spiciness.
- Serve wings immediately after tossing with sauce for optimal crispness.
