This Baked Cod Recipe with Lemon and Garlic combines the fresh, zesty flavors of lemon and garlic with tender baked cod fillets. Lightly coated in a spiced flour mixture and seared before baking, this dish offers a perfect balance of crispy exterior and flaky, moist interior, making it a delicious and healthy weeknight dinner option.

  • Total Time: 22 minutes
  • Yield: 5 servings

Ingredients

Fish and Coating

  • 1.5 lb Cod fillet pieces (4-6 pieces)
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Lemon Garlic Sauce

  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil, divided
  • 2 tbsp melted butter
  • 5 garlic cloves, minced

Garnish

  • 1/4 cup chopped fresh parsley leaves

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the cod.
  2. Prepare Lemon Sauce: In a shallow bowl, mix together the lemon juice, 3 tbsp olive oil, and melted butter. Do not add garlic yet; set this sauce aside.
  3. Mix Flour and Spices: In another shallow bowl, combine the all-purpose flour, ground coriander, Spanish paprika, ground cumin, salt, and black pepper. Place this mixture next to the lemon sauce.
  4. Coat the Fish: Pat the cod fillets dry with paper towels. Dip each fillet first into the lemon sauce, then dredge it in the flour and spice mixture, shaking off excess flour. Reserve the lemon sauce for later use.
  5. Sear the Cod: Heat 2 tbsp olive oil in a cast iron skillet or oven-safe pan over medium-high heat. When the oil is shimmering but not smoking, add the fish pieces. Sear them for about 2 minutes on each side to develop a light golden crust, but do not cook fully. Remove the skillet from heat afterward.
  6. Add Garlic to Sauce: To the reserved lemon sauce, add the minced garlic and mix well. Drizzle this garlic-lemon sauce evenly over the seared fish fillets in the skillet.
  7. Bake the Cod: Place the skillet in the preheated oven and bake until the fish flakes easily with a fork, about 8-10 minutes. Start checking around 8 minutes to avoid overcooking.
  8. Garnish and Serve: Remove the skillet from the oven, sprinkle the chopped fresh parsley over the fish, and serve immediately for best flavor.

Notes

  • Patting the fish dry before coating helps the flour mixture stick better and promotes a crispier exterior.
  • Using a cast iron or oven-safe skillet allows you to sear and bake the fish without transferring, maintaining flavors and saving cleanup.
  • Check the fish early while baking to prevent overcooking and drying out.
  • You can substitute cod with other firm white fish like haddock or halibut.
  • For a gluten-free option, replace all-purpose flour with a gluten-free flour blend.
