Ingredients
Wings Marinade
- 2 pounds wing portions (wingettes, drumettes, or a combo)
- 2 tablespoons oil (olive or avocado)
- 1 teaspoon lemon juice (freshly squeezed)
- 4 cloves garlic (finely minced)
- ¼ teaspoon black pepper (to taste)
- ½ - 1 teaspoon red pepper flakes (to taste)
- ½ teaspoon salt (to taste)
Coating
- 2 tablespoons cornstarch (tapioca or arrowroot starch)
- ⅓ cup grated Parmesan cheese (plus more for serving)
Garnish and Serving
- Fresh parsley (finely chopped)
- Italian or Ranch dressing (for serving)
Instructions
- Preheat and Prepare Sauce: Preheat your oven to 400°F (200°C). In a large bowl, whisk together lemon juice, olive oil, minced garlic, black pepper, red pepper flakes, and salt until a slightly thick sauce forms, ensuring the flavors combine well.
- Toss Wings in Sauce: Add the wing portions to the bowl and toss them thoroughly in the sauce, making sure each wing is evenly coated with the flavorful mixture.
- Coat Wings with Cornstarch and Parmesan: Sprinkle the cornstarch evenly over the wings and toss again to coat completely, which helps create the crispy texture. Then gradually add the grated Parmesan cheese, tossing carefully to cover all wings fully with the cheesy coating.
- Arrange and Bake Wings: Line a large baking sheet with aluminum foil or parchment paper and place a wire rack on top. Arrange the wings in a single layer with skin side down, ensuring that no wings are touching for even crisping. Bake in the preheated oven for 40-45 minutes, flipping the wings halfway through cooking to promote uniform browning and crispiness.
- Optional Broiling for Extra Crispiness: If desired, finish by broiling the wings on high for 2-4 minutes, keeping a close watch to avoid burning; this step crisps the wings further and enhances the golden color.
- Garnish and Serve: Once baked, sprinkle additional Parmesan cheese and freshly chopped parsley over the wings. Serve immediately with ranch or Italian dressing on the side for dipping and enjoy your flavorful, crispy garlic Parmesan wings.
Notes
- For extra crispy wings, use a wire rack to allow air circulation around the wings during baking.
- Adjust red pepper flakes to control the heat level to your preference.
- Broiling is optional but recommended for a crunchier finish; watch carefully to prevent burning.
- Substitute arrowroot or tapioca starch if cornstarch is unavailable for gluten-free coating.
- Leftover wings can be refrigerated in an airtight container for up to 3 days and reheated in the oven to retain crispiness.
