Ingredients
Wet Ingredients
- 2/3 cup mashed banana
- 3 tbsp pure maple syrup (or honey)
- 2 tbsp oil (or water)
- 1/2 tsp pure vanilla extract (optional)
Dry Ingredients
- 1 cup flour (white, spelt, oat, or gluten-free all-purpose)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a donut pan or mini muffin tin thoroughly to prevent sticking.
- Mix Wet Ingredients: In a large bowl, whisk together the mashed banana, pure maple syrup (or honey), oil (or water), and vanilla extract if using until well combined.
- Add Dry Ingredients: Stir the flour, baking powder, and salt into the wet mixture. Mix until just combined to form a smooth donut batter without overmixing.
- Fill the Pan: Spoon or pour the batter evenly into the prepared donut pan or mini muffin tin, smoothing the tops with a spatula.
- Bake: Place the pan in the preheated oven and bake for approximately 8 minutes, or until the donuts have risen and a toothpick inserted into the center comes out mostly clean.
- Cool and Serve: Remove the pan from the oven and let the donuts cool completely before removing them from the pan. Optionally, top with icing or a cinnamon cream cheese frosting for extra flavor.
Notes
- This recipe works well with various flours like white, spelt, oat, or gluten-free all-purpose flour, but almond flour or whole wheat flour have not been tested and are not recommended.
- For a vegan version, substitute honey with maple syrup and use oil or water as indicated.
- Donuts should be cooled fully before frosting to prevent melting or sliding.
- Donuts are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
