Delicious and fluffy banana waffles made with ripe bananas, cinnamon, and a hint of vanilla. Perfect for a weekend breakfast or brunch, these waffles are golden brown with a slightly crispy edge and a soft, flavorful interior.

  • Total Time: 25 minutes
  • Yield: 16 waffles

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 4 tablespoons brown sugar (use more or less to taste)
  • 1 teaspoon cinnamon (use more or less to taste)

Wet Ingredients

  • 2 large eggs
  • 6 tablespoons melted butter (3 oz/85 grams)
  • 1½ cups milk
  • 3 teaspoons vanilla extract
  • 2 ripe bananas (about 200 grams), mashed smooth
  • cooking spray (for the waffle iron)

Instructions

  1. Preheat and mash bananas. Preheat your waffle iron thoroughly. In a small bowl, mash the ripe bananas until smooth with no large chunks to ensure even flavor throughout the waffles.
  2. Mix dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, salt, baking powder, brown sugar, and cinnamon until well combined to create a uniform dry base.
  3. Combine wet ingredients. In a separate smaller bowl, whisk the eggs, melted butter, milk, vanilla extract, and mashed bananas until the mixture is smooth and fully incorporated.
  4. Make the batter. Pour the wet ingredients into the dry ingredients and gently mix until just combined. The batter should be thick and lumpy; avoid overmixing to keep the waffles tender.
  5. Cook the waffles. Lightly spray the preheated waffle iron with cooking spray. Pour enough batter onto the iron to just fill it and cook according to your waffle iron’s instructions until the waffles are golden brown with slightly crispy edges.
  6. Serve and garnish. Serve the waffles hot with your favorite toppings such as maple syrup, whipped cream, additional sliced bananas, or a dusting of powdered sugar to enhance flavor and presentation.

Notes

  • Use ripe bananas for natural sweetness and better flavor.
  • Do not overmix the batter to avoid tough waffles.
  • Adjust the amount of brown sugar and cinnamon according to taste preference.
  • Ensure the waffle iron is well-preheated for crispier waffles.
  • Serve immediately for best texture; keep warm in a low oven if making in batches.
