Burritos
- 4 burrito-sized tortillas
- 1 ¼ cups shredded Mexican-style cheese
Toppings and Sides
- Sliced jalapeños (optional)
- Black olives (optional)
- Grilled tofu, chicken, or ground beef (optional)
- Sour cream (optional)
- Baked tortilla chips
- Guacamole
- Black bean and corn salsa
- Sriracha (Cholula or Tapatío) (optional)
- Taco dip
Instructions
- Prepare the Refried Bean Mixture: Set a small saucepan over medium heat and add the refried beans, salsa, and the homemade taco seasoning ingredients (chili powder, paprika, garlic powder, cumin, salt, and pepper). Stir continuously until the mixture is well combined and heated through.
- Assemble Burritos: Lay the tortillas flat on a work surface. Evenly spread about ¼ of the shredded Mexican-style cheese in the center of each tortilla.
- Add Beans to Tortillas: Spoon the seasoned refried bean mixture over the cheese in a rectangular shape centered on each tortilla.
- Roll the Burritos: Fold in the sides of the tortilla, then roll the bottom edge over the filling, tucking it tightly like an egg roll. Continue rolling until the tortilla is fully closed. Repeat for all tortillas.
- Heat Skillet: Heat a large skillet over medium-high heat. Place two burritos flat in the skillet, spaced slightly apart.
- Crisp the Burritos: For a crispy golden exterior, lightly spray the burritos with cooking spray or brush with oil or butter. Cook for 2 to 4 minutes on one side until golden brown, then flip. Coat the other side similarly and cook until crisp and golden. Also crisp the edges for a fully toasted finish.
- Serve: Serve the warm burritos with taco dip, baked tortilla chips, pineapple salsa, guacamole, sliced jalapeños, black olives, and sour cream on the side as desired.

Notes
- You can customize the burritos by adding grilled tofu, chicken, or ground beef inside with the beans and cheese.
- Use homemade taco seasoning or a store-bought blend to save time.
- Be careful not to overheat the skillet to avoid burning the tortillas.
- Serve with your favorite salsas and dips for added flavor and texture.
- For a low-fat option, use reduced-fat cheese and cooking spray instead of oil or butter.
