These easy and delicious beef burritos are loaded with seasoned ground beef, rice, beans, vegetables, and melty Tex-Mex cheese, all wrapped in a soft flour tortilla. Perfect for a quick weekday dinner or a satisfying meal on a budget.

  • Total Time: 32 minutes
  • Yield: 4 servings

Ingredients

  • 3/4 cup (180 ml) cold water
  • 1/2 cup (100 g) basmati rice
  • 1/4 tsp salt
  • 1 lb (450 g) lean ground beef
  • 1 tbsp (15 ml) vegetable oil
  • 1 red bell pepper, seeded and thinly sliced
  • 1 can (14 oz / 398 ml) black beans, rinsed and drained
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 4 soft flour tortillas (12 inches / 30 cm each)
  • 3 cups (180 g) iceberg lettuce, thinly sliced
  • 1/2 cup (125 ml) salsa, plus more for serving
  • 1 cup (150 g) frozen corn kernels, thawed
  • 1 1/2 cups (150 g) Tex-Mex cheese, grated

Instructions

  1. In a small pot, bring water, rice, and salt to a boil. Cover, reduce to very low heat, and cook for 8 minutes. Remove from heat and let sit, covered, for 4 minutes.
  2. Meanwhile, heat oil in a large non-stick skillet over medium-high heat. Add ground beef and cook for 5 minutes, breaking it apart. Season with salt and pepper.
  3. Add the sliced red bell pepper to the beef and cook for another 3 minutes. Stir in black beans, chili powder, and cumin. Mix well and adjust seasoning as needed.
  4. Lay tortillas on a flat surface. Evenly divide and layer rice, lettuce, beef mixture, salsa, corn, and cheese over each tortilla.
  5. Fold in the sides of each tortilla, then roll tightly from bottom to top to seal. Place seam-side down and cut in half before serving. Serve with extra salsa if desired.
  6. Optional (for crispy burritos): Place rolled burritos on a baking sheet lined with parchment paper. Bake at 425°F (220°C) for 6 minutes per side until crispy and golden.

Notes

  • For crispier burritos, bake as instructed above.
  • Use leftover rice or pre-cooked rice to save time.
  • Swap ground beef with ground turkey or plant-based alternatives for variation.
  • Add avocado or sour cream for extra creaminess.
  • Perfect for meal prep – wrap and store in the fridge or freezer for later.
