This Beef Stroganoff Casserole is a comforting American classic that combines tender ground beef, sautéed mushrooms and onions, creamy mushroom soup, and egg noodles, all baked to perfection and topped with crispy French fried onions. It's an easy weeknight meal packed with rich flavors and creamy textures that everyone will love.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 diced onion
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced

Wet Ingredients and Sauces

  • 1 can (10.5 ounces) condensed mushroom soup
  • ¾ cup beef broth
  • ¾ cup milk
  • 1 tablespoon Worcestershire sauce
  • 16 ounces sour cream

Other Ingredients

  • 1 pound egg noodles
  • Salt and pepper to taste
  • 1 cup French fried onions

Instructions

  1. Preheat and cook noodles: Preheat your oven to 350°F (175°C). Bring a large pot of salted water to a boil and cook the egg noodles according to the package directions, then drain them thoroughly.
  2. Cook beef and vegetables: While the noodles cook, heat a large skillet over medium-high heat. Add the ground beef, diced onion, and sliced mushrooms, cooking until the beef is browned and the vegetables are soft and tender. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  3. Prepare sauce: In a separate bowl, whisk together the condensed mushroom soup, beef broth, milk, and Worcestershire sauce. Pour this mixture into the skillet with the beef and vegetables, stirring to combine. Bring the mixture to a light simmer and season with salt and pepper to taste.
  4. Add sour cream and combine: Remove the skillet from heat and stir in the sour cream until smooth. Add the cooked egg noodles and toss everything well to combine evenly.
  5. Assemble casserole: Transfer the combined mixture into a 9×13-inch baking dish, spreading it out evenly.
  6. Bake the casserole: Place the baking dish in the preheated oven and bake for 15 to 20 minutes until heated through.
  7. Add topping and finish baking: Sprinkle the cup of French fried onions evenly over the top of the casserole. Return the dish to the oven and bake for an additional 5 minutes until the casserole is bubbly and the onions are golden brown and crispy.

Notes

  • For a lighter option, use low-fat sour cream and milk.
  • You can substitute fresh mushrooms if preferred, sauté them with the beef and onions.
  • If you can’t find French fried onions, crushed crispy fried shallots or breadcrumbs can work as a topping.
  • Make sure to drain the egg noodles well to avoid a watery casserole.
  • This dish can be prepared a day ahead, assembled, and refrigerated before baking.
