Light and simple sweet crepes filled with a creamy cheesecake-like filling and juicy mixed berries, perfect for a decadent breakfast or brunch.

  • Total Time: 1 hour
  • Yield: 8-10 crepes

Ingredients

For The Crepes:

  • 1 cup all purpose flour
  • 1/2 cup whole milk
  • 1/2 cup water
  • 3 large eggs
  • 2 tablespoons melted unsalted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For The Cream Cheese Filling:

  • 8 oz cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For The Berry Sauce:

  • 2 cups mixed berries (boysenberries, sliced strawberries, raspberries, blueberries)
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the Crepe Batter: Add all crepe ingredients to a blender, cover, and blend on low speed until smooth. Transfer batter to an airtight container and refrigerate for at least 1 hour, up to overnight.
  2. Make the Cream Cheese Filling: In a large bowl, beat cream cheese with sugar and vanilla extract until smooth. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until smooth. Refrigerate until needed.
  3. Prepare the Berry Sauce: In a bowl or small pot, combine mixed berries, sugar, and cornstarch. Heat over medium-low heat until juices release and the sauce thickens slightly. Set aside.
  4. Cook the Crepes: Heat a large nonstick skillet over medium heat and lightly spray with nonstick spray. Pour about 1/4 cup crepe batter into the pan, swirling to spread thinly and evenly. Cook 1 minute until edges start to crisp, then flip and cook another 20-30 seconds. Stack cooked crepes and cover to keep warm while cooking the rest.
  5. Assemble and Serve: Spread about 1/4 cup of cream cheese filling on each crepe, then spoon 2 tablespoons of berry sauce on top. Roll up the crepes and serve immediately.

Notes

  • Chilling the batter helps the crepes hold together and improves texture.
  • You can prepare the cream cheese filling and berry sauce a day in advance and refrigerate.
  • For a thinner crepe, use a little less batter per crepe or swirl it thinner in the pan.
  • Use fresh or frozen mixed berries for the sauce as preferred.
  • Nonstick spray or a light brush of melted butter prevents sticking while cooking crepes.
