4 from 1 review

These Banana Muffins are perfectly sweet, infused with warming spices like nutmeg and cinnamon, light, fluffy, and incredibly easy to make. Loaded with mashed overripe bananas and crunchy walnuts, they make a delicious breakfast or snack option for any time of day.

  • Total Time: 40 minutes
  • Yield: 15 muffins

Ingredients

Wet Ingredients

  • ¾ cup overripe bananas mashed (about 3 bananas)
  • ¾ cup granulated sugar (150 grams)
  • ½ cup salted butter melted (113 grams, 1 stick)
  • 2 teaspoons pure vanilla extract (8 grams)
  • 2 large eggs room temperature (100 grams)

Dry Ingredients

  • 2 cups all-purpose flour (240 grams)
  • 1 teaspoon baking soda (6 grams)
  • 1 teaspoon ground cinnamon (3 grams)
  • 1 teaspoon ground nutmeg (3 grams)
  • ½ teaspoon kosher salt

Add-ins

  • 1 cup chopped walnuts (113 grams)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a 12-count muffin tin with paper liners. Set aside for later use.
  2. Mix Wet Ingredients: In a medium-sized bowl, whisk together the mashed bananas, granulated sugar, melted butter, pure vanilla extract, and the eggs until well combined and smooth.
  3. Add Dry Ingredients: Over the wet ingredients, sprinkle the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, kosher salt, and chopped walnuts. Stir gently until just incorporated, being careful not to overmix to maintain the muffins’ light texture.
  4. Fill Muffin Tins: Spoon the batter into the prepared muffin tin wells, filling each about two-thirds full to allow room for rising.
  5. Bake: Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center of a muffin comes out clean and the tops spring back when lightly pressed.
  6. Cool: Remove the muffins from the oven and allow them to cool in the muffin tin for 5 minutes. Then transfer them to a wire rack to cool completely. Repeat the process if you have remaining batter.

Notes

  • Use overripe bananas for the best natural sweetness and moist texture.
  • Do not overmix the batter once the dry ingredients are added to avoid dense muffins.
  • You can substitute walnuts with pecans or omit nuts for a nut-free version.
  • Store muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
