Ingredients
Dry Ingredients
- 1 cup Almond Flour
- 3 tbsp Coconut Flour
- 1 tsp Baking Powder
- 2 tsp Xanthan Gum
- Sea Salt (to taste)
Wet Ingredients
- 1 Egg (lightly beaten)
- 3 tsp Water
- 2 tsp Apple Cider Vinegar
Instructions
- Combine Dry Ingredients: In a food processor or blender, add the almond flour, coconut flour, xanthan gum, baking powder, and a pinch of sea salt. Pulse several times to mix all the dry ingredients thoroughly.
- Add Vinegar: Pour in the apple cider vinegar and pulse again to incorporate it evenly into the dry mix.
- Add Egg and Water: Add the lightly beaten egg along with the water. Pulse the mixture until it forms a sticky dough ball, ensuring the ingredients are well combined.
- Knead Dough: Wrap the dough in plastic wrap and knead it through the wrap for a couple of minutes to create a pliable consistency.
- Rest Dough: Allow the dough to rest for 10 minutes. This step helps the flours hydrate and improves the dough’s elasticity.
- Form Tortillas: Divide the dough into 8 equal-sized balls, about 1 inch each. Roll out each ball between two sheets of baking paper using a rolling pin until you achieve approximately a 5-inch diameter tortilla.
- Heat Pan: Place a dry pan over medium heat and allow it to warm thoroughly for even cooking.
- Cook Tortillas: Cook each tortilla on the pan for about 5 seconds on the first side, then flip and cook for 30 seconds more on the other side. The tortillas should be soft and slightly browned.
- Serve or Rewarm: Serve the tortillas warm, ideally wrapped in towels to maintain softness. To rewarm, briefly heat on both sides for a few seconds to regain elasticity before serving.
Notes
- Ensure not to overcook the tortillas as they can become brittle.
- For best results, use fresh almond and coconut flours.
- Store tortillas wrapped in an airtight container or wrapped in towels to keep them soft.
- This dough can be frozen for convenience; thaw completely before rolling and cooking.
- Use parchment or baking paper to prevent sticking when rolling out dough balls.
