This Blue Cheese Burger recipe features juicy ground beef patties mixed with creamy blue cheese and fresh chives, grilled or pan-fried to perfection. Topped with red onion slices and served on toasted hamburger buns, this flavorful burger is an easy and delicious option for a quick weeknight meal or weekend cookout.

  • Total Time: 17 minutes
  • Yield: 3 servings

Ingredients

Meat Mixture

  • 1½ lbs ground beef (85/15 ratio)
  • 2 Tbsp chives (minced)
  • 2 oz blue cheese (crumbled)
  • ½ tsp Worcestershire sauce

Seasoning

  • 1 tsp burger seasoning

Burger Assembly

  • 3 hamburger buns (double if making six ¼-pound patties)
  • ½ medium red onion (sliced)
  • 1 Tbsp extra virgin olive oil (for stovetop cooking)

Instructions

  1. Mix the ingredients: In a large mixing bowl, combine the ground beef, minced chives, crumbled blue cheese, and Worcestershire sauce. Mix gently to incorporate all ingredients evenly without overworking the meat.
  2. Preheat cooking surface: Preheat your grill, frying pan, or skillet to medium-high heat, approximately 425°F (218°C) if using a grill. For stovetop cooking, add a tablespoon of extra virgin olive oil to the pan as it heats to prevent sticking. If grilling, clean and oil the grates to ensure easy flipping.
  3. Form patties: Shape the meat mixture into three ½-pound patties (or six ¼-pound patties if preferred). Make sure the patties are evenly sized for uniform cooking.
  4. Season the patties: Generously sprinkle burger seasoning on the top side of each patty just before placing them on the cooking surface, seasoned side down.
  5. Cook the burgers: Cook the patties for about 4 minutes on the first side. Then season the second side, flip, and cook for another 3-4 minutes or until the burgers reach your desired level of doneness (medium rare to well done).
  6. Rest the burgers: Remove the patties from heat and allow them to rest for 5 minutes. This step helps the juices redistribute within the meat for a juicy burger.
  7. Assemble the burgers: Place the bottom bun on a plate, add a burger patty, top with additional blue cheese crumbles and red onion slices, and finish with the top bun. Serve immediately.

Notes

  • For a milder flavor, use less blue cheese or substitute with feta cheese.
  • To ensure even cooking, make a small indentation in the center of each patty before cooking to prevent puffing.
  • Adding Worcestershire sauce enhances the savory, umami flavor of the burger.
  • Let the patties rest after cooking to retain juiciness.
  • Double the recipe for more servings or smaller patties for sliders.
