Ingredients
Crust
- 2 sleeves (18 full-sheets) graham crackers
- 1/2 cup butter, melted
- 1/4 cup sugar
Blueberry Swirl
- 1 1/4 cup blueberries (frozen or fresh)
- splash of lemon juice
- 1 tsp corn starch
- 2 tbsp sugar
Filling
- 2 packages (8 oz each) cream cheese, room temperature
- 3/4 cup sugar
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- 2 eggs, room temperature
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the crust and cheesecake bars.
- Prepare Crust: Using a food processor, pulse the graham crackers, melted butter, and sugar together until finely ground. Press this mixture firmly into an 8x8 inch pan lined with parchment paper, ensuring edges are even and compact. Bake for 10-12 minutes until the edges turn slightly golden brown. Remove and allow to cool slightly.
- Make Blueberry Swirl: In a medium saucepan over medium heat, combine blueberries, lemon juice, corn starch, and sugar. Simmer, stirring occasionally, for about 10 minutes until the mixture thickens and the blueberries have broken down. Remove from heat and let cool.
- Prepare Filling: With cream cheese and eggs at room temperature, beat the cream cheese using an electric mixer with a whisk attachment on high speed until creamy and smooth. Add vanilla extract, flour, sugar, and eggs, then mix again until fully combined and smooth.
- Assemble the Bars: Pour the cream cheese filling evenly over the pre-baked crust. Spoon dollops of the cooled blueberry mixture over the filling. Use a skewer, toothpick, or knife to swirl the blueberries into the filling creating a marbled effect.
- Bake: Bake the assembled bars for 45 minutes at 325°F (163°C) until set but slightly jiggly in the center. Remove from oven and allow to cool completely.
- Chill and Serve: Refrigerate the cheesecake bars for 2-3 hours until fully chilled and firm. Cut into 9 bars. Serve and enjoy your creamy blueberry cheesecake bars!
Notes
- Ensure cream cheese and eggs are at room temperature for a smooth filling without lumps.
- Use fresh or frozen blueberries for the swirl; if frozen, thaw slightly before cooking.
- Line the pan with parchment paper for easy removal of the bars.
- The bars can be made a day ahead and stored in the refrigerator.
- Use a toothpick to create as intricate or simple blueberry swirls as desired.
