Ingredients
Blueberry Filling
- 4 cups fresh blueberries (frozen works too)
- 3 tablespoons granulated sugar
- 1 tablespoon + 1 teaspoon cornstarch
- 3 teaspoons fresh lemon juice
Crumble Topping
- 3/4 cup all-purpose flour
- 3/4 (heaping) cup old fashioned rolled oats
- 1/3 cup + 1 tablespoon packed brown sugar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 1/2 cup butter, cold and cubed (1 stick)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Lightly grease or spray a 9"x6" baking pan to prevent sticking, then set it aside.
- Mix Blueberry Filling: In a large bowl, combine the fresh blueberries, granulated sugar, cornstarch, and fresh lemon juice. Stir gently to ensure the fruit is evenly coated and mixture is smooth.
- Transfer Filling: Pour the blueberry mixture into the prepared baking pan. Spread it evenly to form a flat layer for even baking.
- Prepare Crumble: In a medium bowl, whisk together the all-purpose flour, rolled oats, brown sugar, kosher salt, and ground cinnamon until well mixed.
- Incorporate Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry blender or your fingertips, cut the butter into the mixture until the texture resembles peas slightly larger than the size of those peas, ensuring some chunks remain for texture.
- Assemble and Bake: Evenly sprinkle the crumble topping over the blueberry layer. Place in the oven and bake for 35 to 40 minutes, or until the topping is golden brown and the blueberry juices are bubbly.
- Cool and Serve: Remove the crisp from the oven and allow it to cool for 5 to 10 minutes. Serve warm, optionally with a scoop of ice cream for extra indulgence.
Notes
- You can use frozen blueberries if fresh are not available; just thaw and drain excess moisture.
- For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
- Ensure the butter is cold when cutting into the topping to get a crisp, crumbly texture.
- Serving warm enhances the flavor and texture of the crisp. Ice cream or whipped cream are excellent accompaniments.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently before serving.
