Ingredients
For the Crumble Topping
- 1½ cup all-purpose flour
- ¾ cup granulated sugar
- ½ teaspoon salt
- ½ cup butter, melted
For the Shortbread Crust
- 1¼ cup butter, room temperature
- 2½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ½ teaspoon salt
For the Blueberry Filling
- 5 cups fresh blueberries
- Zest of 1 lemon
- 2 tablespoons lemon juice
- ¼ teaspoon cinnamon
- ½ cup granulated sugar
- 4 teaspoons corn starch
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper, allowing for an overhang to easily lift out the bars after baking.
- Make the Crumble Topping: In a medium bowl, whisk together flour, sugar, and salt. Drizzle melted butter over the mixture and stir until it resembles wet sand with clumps. Place the crumble mixture in the refrigerator to chill while preparing other components.
- Prepare the Shortbread Crust: In a stand mixer or with a hand mixer, combine the butter, flour, sugar, cinnamon, vanilla extract, and salt. Mix on medium speed until combined. The dough will look dry but will hold together when pressed.
- Press and Parbake Crust: Transfer the dough into the prepared pan, pressing it evenly to create a flat bottom layer with a slight lip around the edges if desired. Use a fork to poke holes across the dough. Bake in the preheated oven for 18-20 minutes, or until the crust is lightly golden around the edges.
- Prepare Blueberry Filling: In a large bowl, gently toss the fresh blueberries with lemon zest, lemon juice, sugar, cinnamon, and corn starch until evenly coated.
- Assemble the Bars: Remove the warm crust from the oven, then spread the blueberry filling evenly over the crust.
- Add Crumble Topping and Final Bake: Sprinkle the chilled crumble topping evenly over the blueberries. Return the pan to the oven and bake for 45-50 minutes, until the topping is golden and the filling bubbles. If the crumble browns too quickly, cover lightly with foil.
- Cool and Serve: Remove the bars from the oven and cool completely on a wire rack before slicing. For firmer bars that slice easily, refrigerate before serving. Serve at room temperature or chilled, optionally topped with vanilla ice cream and whipped cream.
Notes
- The crumble topping can be prepared ahead and stored in the fridge until ready to use.
- Parbaking the crust ensures it is fully cooked and prevents sogginess once the filling is added.
- Make sure to gently toss the blueberries with the filling ingredients to avoid crushing them and keep the filling intact.
- Chilling the bars after baking helps them set and makes slicing easier.
- You can dust your hands with flour when pressing the crust to prevent sticking.
- Use fresh blueberries for best texture and flavor; frozen blueberries may release excess moisture.
- If the crumble topping starts to burn during baking, tent the bars lightly with foil to protect it.
