These Blueberry Upside Down Cakes are individual-sized, moist, and bursting with fresh blueberry flavor. A delightful twist on the classic upside-down cake, these treats use monk fruit sweetener for a lower sugar option and are perfect for serving warm with a scoop of vanilla ice cream or whipped cream.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Berry Topping

  • 3 tablespoons monk fruit brown sugar (packed, such as Wholesome Yum sugar-free)
  • 2 cups fresh blueberries

Cake Batter

  • ⅔ cup all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon baking soda
  • ⅓ cup monk fruit sweetener (or granulated sugar)
  • 2 tablespoons butter (melted)
  • 1 large egg (beaten)
  • ½ teaspoon vanilla extract
  • ⅓ cup low-fat buttermilk

Instructions

  1. Prepare Ramekins: Spray four 5-ounce or 6-ounce ramekins with cooking spray. Evenly sprinkle about 3 teaspoons of the packed brown sugar into the bottom of each ramekin. Then, fill each ramekin with ½ cup of fresh blueberries, spreading them out evenly to create the base layer.
  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking powder, kosher salt, baking soda, remaining monk fruit sweetener, and remaining brown sugar to combine all dry ingredients thoroughly.
  3. Add Wet Ingredients: To the dry mix, add the beaten egg, melted butter, vanilla extract, and low-fat buttermilk. Stir gently until just combined, making sure not to overmix, to form a smooth batter.
  4. Assemble Cakes: Spoon the batter evenly over the blueberries in each ramekin, ensuring all cups are filled uniformly. Place the ramekins carefully into the basket of an air fryer for cooking.
  5. Air Fry the Cakes: Air fry at 320°F (160°C) for about 14 to 15 minutes. Start checking at 12 to 13 minutes by inserting a toothpick; if it comes out clean, the cakes are done. If not, continue cooking, adjusting time based on your air fryer’s performance.
  6. Alternative Oven Baking: If baking in a conventional oven, preheat the oven to 350°F (175°C). Bake the ramekins for 20 to 25 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool and Serve: Allow the cakes to cool for 5 minutes after cooking. Run a small knife around the edges of each ramekin to loosen the cakes. Carefully invert each cake onto a serving plate. If the tops have puffed up, trim any excess to create a level surface before flipping. Serve warm, optionally topped with a scoop of light vanilla ice cream or whipped cream for extra indulgence.

Notes

  • Use fresh blueberries for best flavor and texture; frozen blueberries may release too much moisture.
  • If you prefer sweeter cakes, adjust the monk fruit sweetener amount to taste.
  • Make sure to grease or spray the ramekins well to prevent sticking during inversion.
  • Cooking times may vary slightly depending on your air fryer model; start checking early to avoid overcooking.
  • These cakes are best enjoyed warm but can be stored covered in the refrigerator for up to 2 days.
