Ingredients
Cookie Dough
- 2 cups all purpose flour (spoon and level for accuracy)
- 1 teaspoon baking powder (for lift)
- ½ teaspoon salt (balances sweetness)
- ½ cup unsalted butter, softened (room temperature)
- ¾ cup granulated sugar (for cookie dough)
- 1 large egg (room temperature preferred)
- 1 teaspoon vanilla extract (pure vanilla tastes best)
- 2 tablespoons milk (whole milk preferred)
Custard Filling
- 2 cups milk
- ½ cup granulated sugar (for custard)
- 4 egg yolks (save whites for another use)
- 3 tablespoons cornstarch (thickens the custard)
- 2 teaspoons vanilla extract (for custard flavor)
- 2 tablespoons unsalted butter (for custard richness)
Chocolate Ganache
- 1 cup semi sweet chocolate chips
- ½ cup heavy cream (makes smooth ganache)
- 1 tablespoon unsalted butter (for glossy glaze)
Instructions
- Prepare Dry Ingredients: In a medium bowl, mix together the all-purpose flour, baking powder, and salt. Set this mixture aside.
- Cream Butter and Sugar: Beat the softened butter and granulated sugar with an electric mixer on medium speed until the mixture is light and fluffy, about 3 minutes. Add the egg and vanilla extract and continue beating until combined.
- Combine Dough: Alternately add the flour mixture and 2 tablespoons of milk to the butter mixture, mixing just until combined after each addition. Avoid overmixing to keep cookies tender.
- Chill Dough: Refrigerate the dough for 30 minutes to make it easier to handle and to help the cookies hold their shape better during baking.
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking.
- Scoop Cookies: Using a cookie scoop or tablespoon, place portions of dough onto the prepared baking sheets, spacing each cookie about 2 inches apart to allow for spreading.
- Bake Cookies: Bake the cookies in the preheated oven for 10 to 12 minutes, until the edges are set but the centers still look slightly soft—this will keep them tender after cooling.
- Cool Cookies: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before filling.
- Heat Milk for Custard: In a saucepan, heat 2 cups of milk until steaming but not boiling, preparing for the custard filling.
- Mix Egg Mixture: In a separate bowl, whisk together the egg yolks, ½ cup granulated sugar, and cornstarch until smooth.
- Temper Eggs: Slowly pour the hot milk into the egg mixture while whisking constantly to prevent the eggs from scrambling.
- Cook Custard: Pour the mixture back into the saucepan and cook over medium heat, stirring constantly for 5 to 7 minutes until the custard thickens enough to coat the back of a spoon.
- Finish Custard: Remove from heat, stir in 2 teaspoons vanilla extract and 2 tablespoons unsalted butter for richness. Press plastic wrap directly onto the custard surface to prevent a skin from forming and refrigerate until completely cold, preferably overnight.
- Prepare Chocolate Ganache: Heat ½ cup heavy cream in a small saucepan until just simmering, then pour it over 1 cup semi sweet chocolate chips. Let sit for 1 minute, then stir until smooth and glossy.
- Add Butter to Ganache: Stir in 1 tablespoon unsalted butter for a glossy finish. Allow the ganache to cool slightly until it’s thick enough to coat cookies without running off.
- Assemble Cookies: Match cookies into similar sized pairs. Spread about 1 tablespoon of the cold custard onto the flat side of one cookie and top it with the matching cookie to create a sandwich.
- Glaze Cookies: Dip the top side of the cookie sandwich into the chocolate ganache, letting the excess drip off. Place the glazed cookies on parchment paper and let the chocolate set before serving.
Notes
- For best results, chill the custard overnight to fully set and enhance flavor.
- Save leftover egg whites for meringues or macarons to reduce waste.
- If ganache becomes too thick, gently warm it to restore a dippable consistency.
- Cookies can be stored in an airtight container in the refrigerator for up to 3 days. Allow to come to room temperature before serving.
- Make sure not to overbake cookies; slightly soft centers will keep them tender.
