Ingredients
Vanilla Custard
- 1 cup light cream or half & half
- 3 egg yolks, room temperature
- 1/4 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- Pinch of salt
- 2 tablespoons butter, cubed
- 1 1/2 teaspoons vanilla extract
Filling & Assembly
- 3-4 (5x4-inch) croissants
- 3-4 tablespoons chopped nuts (almond, pecan, or walnut)
Chocolate Ganache
- 3 ounces semi-sweet or bittersweet chocolate bar (chopped into small chunks)
- 1/4 cup half & half or light cream
- 1 tablespoon light corn syrup (optional for sheen)
Equipment
- Flat whisk or balloon whisk
- Wooden skewer
- Piping bag with a long piping nozzle tip
Instructions
- Make the vanilla custard: In a small saucepan, whisk together the egg yolks, sugar, cornstarch, and a pinch of salt until smooth and lump-free. Gradually whisk in 1 cup of light cream or half & half until the mixture is smooth and well combined.
- Cook the custard: Place the saucepan over medium heat and whisk continuously for about 4-6 minutes until the mixture thickens to a smooth consistency. Remove from heat immediately to prevent curdling.
- Add butter and vanilla: Add the cubed butter to the hot custard one piece at a time, whisking until each piece is fully incorporated. Then whisk in the vanilla extract until combined.
- Cool the custard: Transfer the custard to a shallow bowl. Cover with a round piece of parchment paper directly on the surface to prevent skin from forming. Refrigerate for 5-10 minutes to chill slightly.
- Optional straining: For an extra smooth texture, strain the custard through a fine mesh sieve to remove any lumps, though this step is optional.
- Prepare the croissants: Using a wooden skewer, carefully poke two holes on opposite sides near the top back of each croissant. Wiggle the skewer to hollow out the center to create space for the custard filling. Set aside.
- Fill the croissants: Fit a long piping nozzle tip onto a piping bag and fill it with the custard cream. Seal the bag and insert the tip into the holes of each croissant. Pipe approximately one-third of the custard into each croissant until filled.
- Make the ganache: In a small pan over medium to medium-low heat, warm the 1/4 cup half & half and light corn syrup together, whisking continuously until hot (do not boil). Remove from heat and immediately stir in the chopped chocolate until fully melted and smooth. Alternatively, microwave the cream and corn syrup for 30 seconds until hot, then stir in the chocolate.
- Top the croissants: Spoon the warm chocolate ganache over the filled croissants, spreading to cover the top. Sprinkle chopped nuts evenly over the ganache for added crunch and flavor.
- Chill before serving: Place the croissants in the refrigerator to chill for about 1 hour, helping the ganache to set and flavors to meld.
Notes
- You can use almond, pecan, or walnut nuts depending on your preference for garnish.
- Straining the custard is optional but recommended for a smoother, more professional texture.
- If you prefer a shinier ganache, adding light corn syrup is an effective technique.
- Allowing the ganache to cool slightly before spooning it over the croissants helps prevent it from melting the custard filling.
- Store leftover croissants refrigerated and consume within 1-2 days for optimal freshness.
