Ingredients
Vegetables
- 1 small yellow onion, thinly sliced
- 3-4 cloves garlic, minced
- 4 cups broccoli florets, cut into bite-sized pieces
- 1 Tbsp. freshly grated ginger
Other Ingredients
- 1 cup roasted cashews
- 2-3 Tbsp. tamari (soy sauce alternative)
- 1 tsp. sesame seeds (or more, to taste)
- 2-3 Tbsp. water or vegetable broth for sautéing and steaming
- Cooked brown rice, quinoa, or noodles, for serving
Instructions
- Start Grain Cooking: Begin by cooking your choice of grain such as brown rice or quinoa according to package instructions so it's ready when your stir-fry is done.
- Prep Onion: Thinly slice the small yellow onion evenly to ensure it cooks uniformly in the skillet.
- Sauté Onion: In a large skillet over medium-high heat, sauté the sliced onion using 3 tablespoons of water or vegetable broth as a no-oil cooking method. Stir occasionally for 8-10 minutes until translucent, adding more liquid as needed to prevent sticking or burning.
- Prepare Aromatics and Broccoli: While onions cook, mince the garlic, grate the ginger using a microplane or fine grater, and cut broccoli into bite-sized florets.
- Add Aromatics and Broccoli to Skillet: When onions become translucent, stir in minced garlic, grated ginger, and broccoli florets evenly.
- Steam Broccoli: Add 1/4 cup water or vegetable broth to the skillet, then cover it. Let the broccoli steam for 5 minutes, stirring occasionally to promote even cooking and prevent the pan from drying out. Add more liquid if necessary.
- Add Cashews and Seasoning: Uncover the skillet and stir in roasted cashews, tamari starting with 2 tablespoons (adjust to taste up to 3 tablespoons), and sesame seeds to enhance flavor and texture.
- Finish Cooking: Continue to cook and stir the mixture for an additional 2-3 minutes until the broccoli reaches your desired tenderness and the cashews are warmed through.
- Serve: Plate the stir-fry over a warm bed of cooked brown rice, quinoa, or noodles and enjoy immediately.
Notes
- To keep the dish oil-free, use water or vegetable broth when sautéing vegetables instead of oil.
- You can substitute tamari with low-sodium soy sauce if needed, but adjust the salt levels accordingly.
- For added protein, tofu or tempeh can be tossed in during the last few minutes of cooking.
- Toast sesame seeds lightly before adding for enhanced nuttiness.
- Make sure not to overcook the broccoli to maintain a pleasant crunch and vibrant green color.
