Ingredients
Main Ingredients
- 1 can (8-count) refrigerated biscuits, not flaky
- 4 ounces cream cheese, room temperature
- ¼ cup (68 g) buffalo sauce
- 2 cups (280 g) rotisserie chicken, shredded
- ¼ cup (28 g) sharp cheddar cheese, shredded
- ¼ cup (28 g) mozzarella cheese, shredded
- 1 teaspoon finely diced green onion
Toppings
- 3 tablespoons buffalo sauce, divided
- 1 teaspoon finely diced green onion, for garnish
- Blue cheese or ranch dressing, for dipping
Instructions
- Prepare Filling: In a large mixing bowl, whisk together cream cheese and ¼ cup buffalo sauce until smooth and well combined. Add shredded chicken, sharp cheddar cheese, mozzarella cheese, and 1 teaspoon diced green onion. Stir until the ingredients are evenly mixed, creating approximately 2 ½ cups of filling.
- Preheat Oven and Prepare Skillet: Preheat your oven to 375°F (190°C). Lightly spray a 10-inch oven-safe skillet with nonstick cooking spray to prevent sticking during baking.
- Flatten Biscuits: Remove the biscuits from the can and place them on a clean workspace. Using a rolling pin, gently roll each biscuit out to about ⅛-inch thickness to create enough surface area for filling and sealing.
- Assemble Buffalo Chicken Bombs: Spoon about ¼ cup of the buffalo chicken filling onto the center of each flattened biscuit. Carefully pinch the edges together to completely seal in the filling and form a ball, making sure there are no gaps to avoid leaks during baking.
- Arrange and Brush with Sauce: Place each sealed biscuit seam-side down in the prepared skillet. Using approximately 2 tablespoons of buffalo sauce, brush the tops of each biscuit generously. Reserve the remaining buffalo sauce for drizzling after baking.
- Bake: Bake the filled biscuits in the preheated oven for 24 to 26 minutes, or until the biscuits are nicely browned and cooked through.
- Finish and Serve: Remove the skillet from the oven and drizzle the reserved buffalo sauce over the tops of the bombs. Garnish with the remaining finely diced green onions. Serve immediately with extra buffalo sauce and blue cheese or ranch dressing for dipping.
Notes
- Make sure to use refrigerated buttermilk biscuits that are thicker and not flaky for best results.
- Shredded rotisserie chicken works perfectly for convenience and flavor.
- Brush buffalo sauce before baking to infuse flavor and after baking for added moisture and spice.
- Serve with ranch or blue cheese dressing to complement the spicy buffalo flavor.
- Can be made ahead and baked just before serving for fresh, warm bites.
