Ingredients
Chicken and Sauce
- 1 pound chicken breasts, diced
- 1 teaspoon olive oil
- Salt and pepper, to taste
- 1/2 cup Sweet Baby Ray's buffalo wing sauce
Wraps
- 4 - 10 inch Extreme Wellness high fiber tortillas
- 2 cups chopped romaine lettuce
- 1 cup diced tomatoes
- 2 tablespoons diced red onion
- 1 avocado, diced
- 1/4 cup light ranch dressing
- 1/4 cup shredded cheddar cheese
- 1/4 cup crumbled blue cheese
Instructions
- Season and cook the chicken: Season the diced chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium heat. Add the seasoned chicken and stir regularly, cooking until the chicken is fully cooked and no longer pink in the center, about 6-8 minutes.
- Add buffalo sauce: Drain any excess liquid from the cooked chicken in the skillet. Stir in the Sweet Baby Ray's buffalo wing sauce, ensuring all chicken pieces are evenly coated.
- Prepare the tortillas: Lay the high fiber tortillas flat on a clean surface. Evenly distribute the chopped romaine lettuce and diced tomatoes on each tortilla as the base layer.
- Assemble the wraps: Top the lettuce and tomatoes with the buffalo chicken mixture, followed by the diced red onion and avocado for extra freshness and texture.
- Add dressing and cheese: Drizzle each wrap with light ranch dressing and sprinkle with your choice of shredded cheddar cheese or crumbled blue cheese for added flavor.
- Roll and serve: Gently roll up the tortillas, tucking in the ends and sides to seal the filling. Secure each wrap with toothpicks, cut in half, and serve immediately for best taste and texture.
