Ingredients
Dry Ingredients
- 1 cup all purpose flour
- 3/4 cup cake flour
- 1/2 cup rolled oats
- 1 tsp. cornstarch
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
Wet Ingredients
- 8 Tbsp. unsalted butter
- 1/2 cup dark brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 Tbsp. vanilla extract
Add-ins and Garnish
- 3/4 cup butterscotch chips
- 1/2 cup mini chocolate chips
- Flaky sea salt (for garnish)
Instructions
- Brown the butter: Melt the unsalted butter in a pan over medium heat, swirling occasionally until it turns golden brown and releases a nutty aroma. Remove from heat and let it cool for 10-15 minutes.
- Preheat and prepare baking sheets: Preheat your oven to 375°F (190°C). Line two baking sheets with silicone baking mats or parchment paper for easy cookie release.
- Mix dry ingredients: In a medium bowl, whisk together the all purpose flour, cake flour, rolled oats, cornstarch, baking soda, baking powder, and salt. Set aside.
- Combine sugars and butter: In another medium bowl, whisk the cooled brown butter with dark brown sugar and granulated sugar until smooth and combined.
- Add eggs and vanilla: Whisk in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract until blended.
- Fold in dry ingredients: Gradually add the flour mixture to the wet ingredients, folding gently until just combined to avoid overmixing.
- Incorporate chips: Fold in the butterscotch chips and mini chocolate chips evenly throughout the dough.
- Scoop dough onto sheets: Using a cookie scoop, portion about 10-12 mounds of dough onto the prepared baking sheets. The dough will be slightly sticky but manageable.
- Bake cookies: Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden and the centers appear set but still soft and gooey.
- Garnish and serve: Remove cookies from oven, sprinkle with flaky sea salt, and optionally top with extra butterscotch or chocolate chips. Let cool slightly before enjoying.
