Ingredients
Meat and Vegetables
- 1 pound ground beef
- 1 medium onion, chopped
- 3 cups cabbage, chopped
Other Ingredients
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ½ cup beef broth
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook the beef: In a skillet over medium heat, brown the ground beef with the chopped onion until fully cooked. Drain any excess fat and then stir in garlic powder, salt, and black pepper for seasoning.
- Layer the casserole: Spread half of the chopped cabbage evenly on the bottom of the prepared baking dish. Then layer the cooked beef mixture over the cabbage. Sprinkle the cooked rice on top, pour the undrained diced tomatoes evenly over the rice, add the remaining cabbage, and finally pour the beef broth over the entire mixture.
- Bake covered: Cover the baking dish tightly with foil and bake in the preheated oven for 45 minutes to allow flavors to meld and ingredients to cook thoroughly.
- Add cheese & finish baking: Remove the foil, sprinkle shredded cheddar cheese evenly over the casserole, and return to the oven uncovered. Bake for an additional 10 to 15 minutes, or until the cheese is melted, bubbly, and slightly golden.
- Cool & serve: Remove the casserole from the oven and let it rest for 5 minutes to set before serving. Enjoy your warm, hearty meal!
Notes
- Make it low-carb: Swap the rice for cauliflower rice or omit it altogether.
- Add more protein: Use ground turkey or sausage for a different flavor.
- Spice it up: Add a pinch of red pepper flakes or hot sauce for extra heat.
- More cheese, please! Try adding mozzarella or pepper jack for extra cheesiness.
