Ingredients
Dough Ingredients
- 1 cup (237 g) water, warmed (about 105°-110°F)
- 2 tablespoons granulated sugar
- 1 teaspoon active dry yeast
- ⅓ cup (75 g) vegetable oil
- 1 teaspoon kosher salt, divided
- 2 ½ cups (312.5 g) all-purpose flour
Cinnamon Butter Topping
- 3 tablespoons unsalted butter
- 3 tablespoons granulated sugar
- ¼ teaspoon cinnamon
Crumble Topping
- 1 cup (125 g) all-purpose flour
- ⅔ cup (133 g) granulated sugar
- 6 tablespoons light brown sugar
- ½ teaspoon kosher salt
- ½ cup (1 stick / 113 g) unsalted butter, melted and cooled slightly
Glaze
- 1 cup (125 g) confectioners' sugar
- 1-2 tablespoons whole milk
Instructions
- Make the yeast mixture: In a large bowl, combine the warmed water, granulated sugar, and active dry yeast. Let it rest for about 5 minutes until the yeast blooms and becomes frothy.
- Prepare the oil and salt mixture: In a small bowl, whisk together the vegetable oil and ½ teaspoon kosher salt. Pour half of this oil mixture into the yeast mixture, setting the rest aside for later.
- Add flour and salt: Add the all-purpose flour and the remaining ½ teaspoon kosher salt to the yeast mixture. Stir until combined into a dough.
- Let dough rise: Transfer the dough to a greased bowl, cover it, and allow it to rise in a warm place for about 1 hour or until doubled in size.
- Preheat oven and prepare pan: Preheat your oven to 450°F (232°C). Line a 12-inch pizza pan with parchment paper.
- Shape dough in pan: Pour the reserved oil mixture onto the lined pizza pan. Transfer the risen dough onto the pan and press it evenly to the edges while creating dimples with your fingers.
- Bake crust first: Bake the dough for 10 minutes in the preheated oven.
- Make cinnamon butter topping: In a microwave-safe bowl, combine the unsalted butter, granulated sugar, and cinnamon. Microwave for about 30 seconds, then stir to blend into a smooth cinnamon butter.
- Make crumble topping: In a small bowl, mix the flour, granulated sugar, light brown sugar, kosher salt, and melted butter until crumbly.
- Assemble toppings on crust: Remove the crust from the oven and brush the entire surface with the cinnamon butter. Evenly sprinkle the crumble topping over the cinnamon butter layer.
- Bake again: Return the pan to the oven and bake for another 10 minutes until the crumble topping is golden brown.
- Cool the bread: Remove the bread from the oven and let it cool for 5 to 10 minutes on a rack.
- Make the glaze: In a small bowl, whisk together the confectioners' sugar and 1 tablespoon of milk until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick to achieve a creamy consistency.
- Drizzle glaze: Drizzle the glaze over the warm bread evenly before serving.
Notes
- The water temperature is important for activating the yeast properly; it should be warm, about 105°-110°F.
- Use fresh active dry yeast to ensure a good rise.
- The dimples in the dough give this bread its characteristic cactus-like appearance.
- Make sure the butter for the crumble is slightly cooled but still melted to help form the crumbly texture.
- The glaze can be adjusted in thickness by adding more or less milk depending on preference.
- For best results, serve cactus bread warm to enjoy its soft texture and sweet toppings.
