Ingredients
Danish Dough
- 1 recipe Easy Danish Dough (as per referenced recipe)
Filling
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 teaspoon ground cardamom
- Pinch salt
- 2 tablespoons unsalted butter, melted
Sugar Coating
- 1 cup (198g) granulated sugar
- 1 teaspoon ground cardamom
Instructions
- Prepare the Dough: Make the Easy Danish Dough according to the original recipe directions, ensuring the dough is smooth and elastic for rolling.
- Prepare Baking Molds: Butter ten 3 x 2-inch soufflé molds thoroughly. Line the bottom of each mold with parchment paper and generously coat with granulated sugar, tapping out any excess. Arrange the molds on a baking sheet for easy handling.
- Mix the Filling: In a small bowl, combine the brown sugar, granulated sugar, ground cardamom, and a pinch of salt. Mix well to create the spiced filling.
- Roll and Fill Dough: Roll the prepared dough into a 16 x 12-inch rectangle. Brush the surface evenly with melted butter. Sprinkle the sugar-cardamom filling evenly over the buttered dough, gently pressing it in so it adheres well.
- Shape the Buns: Starting from the long side, roll the dough tightly into a cylinder. Pinch the seam to seal it. Depending on your baking vessel, cut the rolled dough into 10 equal pieces for soufflé molds or 12 pieces if using a muffin tin.
- Arrange and Proof: Place each piece cut side up into the prepared molds. Cover loosely with plastic wrap and let the dough rise in a warm area until doubled in size, about 1 to 1 1/2 hours.
- Preheat Oven: Adjust the oven rack to the middle-lower position and preheat the oven to 375°F (190°C).
- Bake the Buns: Remove the plastic wrap and bake the buns for 22 to 30 minutes, rotating the pan halfway through, until the rolls are golden brown and baked through.
- Prepare Sugar Coating: While baking, mix together the granulated sugar and ground cardamom in a bowl to coat the buns later.
- Cool and Coat: Once baked, transfer the baking sheet to a wire rack and allow buns to cool for a few minutes. Using a kitchen towel or oven mitts, run a knife around the edges of each soufflé mold, then invert the mold to release the bun onto the wire rack right side up. Toss each bun in the cardamom sugar coating while still warm, then let cool slightly before serving.
Notes
- You can substitute soufflé molds with ramekins or a muffin tin (for muffin tin, cut dough into 12 pieces).
- Press the sugar filling gently into the buttered dough to ensure it adheres well and creates a flavorful swirl.
- Use parchment paper in the molds to prevent sticking and ensure easy removal of the buns.
- Be careful when flipping the buns out of the molds while warm to maintain their shape.
