Ingredients
Burger Sauce
- 1/2 cup mayo
- 2 Tablespoons grated onion
- 2 Tablespoons ketchup
- 1 Tablespoon pickle relish
- 2 teaspoons yellow mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon paprika
Quesadilla Filling
- 1 pound lean ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Worcestershire sauce
- 4 burrito-sized flour tortillas
- 16 thinly sliced cheddar cheese slices
- 1/2 cup onion, chopped
- 1/2 cup pickles, chopped
- 1 Tablespoon olive oil
Instructions
- Prepare Burger Sauce: Combine mayo, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika in a bowl. Whisk together until smooth and refrigerate until ready to serve.
- Cook Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart into small pieces until browned and cooked through. Drain excess grease.
- Season Beef: Add salt, black pepper, garlic powder, and Worcestershire sauce to the cooked beef. Stir well to evenly mix the seasonings. Remove from heat.
- Assemble Quesadillas: Lay out tortillas and spread 2 slices of cheddar cheese over half of each tortilla. Evenly distribute the cooked beef over the cheese, then top with chopped onions and pickles. Add 2 more slices of cheese over the fillings, then fold the tortillas over to form quesadillas.
- Cook Quesadillas: Heat a griddle or large skillet over medium-high heat and add olive oil. Once hot, place quesadillas on the pan and cook for 2-3 minutes per side, until golden brown and the cheese inside has melted.
- Serve: Remove quesadillas from the skillet, slice into triangles, and serve immediately with the prepared burger sauce on the side.
Notes
- Use lean ground beef to reduce excess grease while cooking.
- Adjust pickles and onions to your taste for fresher crunch or more tang.
- For a spicier kick, add a pinch of cayenne pepper to the burger sauce.
- If preferred, you can use a non-stick skillet to prevent sticking without extra oil.
- Make sure the skillet is hot before adding quesadillas to achieve a crispy exterior.
