Ingredients
Meat and Seasonings
- 1½ tablespoon extra-virgin olive oil, divided
- 1 pound lean ground beef
- 1½ teaspoons kosher salt, divided
- 1½ teaspoons garlic powder, divided
- 1½ teaspoons onion powder, divided
- ½ teaspoon ground black pepper, divided
- 1 tablespoon Worcestershire sauce (substitute coconut aminos for gluten free)
Vegetables and Liquids
- 1 pound Yukon gold potatoes, cut into ½-inch dice
- 1 pound small frozen broccoli florets (if large, cut smaller)
- 1 cup low-sodium chicken broth
- 1 cup milk (2% used)
Cheese
- 6 ounces grated cheddar cheese, divided
Instructions
- Heat and Brown the Ground Beef: Heat a large high-edged skillet over medium-high heat and add ½ tablespoon of olive oil. Once hot, add the ground beef and season with ½ teaspoon salt, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon black pepper, and Worcestershire sauce. Break apart the beef and cook until browned and nearly cooked through, about 5 minutes.
- Remove Cooked Beef: Use a slotted spoon to transfer the beef to a plate, leaving excess fat behind. Wipe out the skillet if there’s too much fat remaining.
- Cook the Potatoes: Add 1 tablespoon of olive oil to the skillet and heat over medium-high. Add diced potatoes and season with 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, and ¼ teaspoon black pepper. Sauté for 4-5 minutes until the potatoes start to brown slightly.
- Add Liquids and Simmer Potatoes: Pour in chicken broth and milk, bring to a simmer, then cover. Cook for 12 minutes, stirring occasionally.
- Add Broccoli: Stir in frozen broccoli, cover again, and cook for an additional 15 minutes until potatoes are fork-tender. Stir occasionally to prevent sticking, covering the skillet after each stir.
- Combine Ground Beef and Cheese: Return the cooked ground beef to the skillet and stir in half of the shredded cheddar cheese (about 3 ounces). Let simmer for 5 minutes until the cheese melts into the sauce.
- Melt Remaining Cheese: Sprinkle the remaining cheese over the skillet and cover to let it melt. Alternatively, if the skillet is oven-safe, place under the broiler for 1-2 minutes to melt and slightly brown the cheese on top.
Notes
- For a gluten-free version, substitute Worcestershire sauce with coconut aminos.
- Use small broccoli florets or chop larger ones to ensure even cooking.
- Stir the mixture occasionally during simmering to avoid sticking and burning.
- If you do not have an oven-safe skillet, cover the skillet with a lid instead of broiling the cheese.
- Adjust seasoning to taste before adding cheese to enhance flavors as desired.
