Ingredients
Crab Mixture
- ½ cup crab meat
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- ½ to 1 teaspoon Old Bay seasoning
- 1 teaspoon finely chopped green onion
- Salt and pepper to taste
Cheese
- ½ cup shredded Gruyère cheese (divided)
- ½ cup shredded Cheddar cheese (divided)
Bread and Butter
- 2 to 3 tablespoons butter (softened)
- 4 slices sourdough bread (or other sturdy bread)
Instructions
- Preheat Skillet: Heat a large skillet over medium heat to prepare for toasting the sandwiches.
- Make Crab Mixture: In a small bowl, combine the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, finely chopped green onion, salt, and pepper. Taste the mixture and adjust the seasoning as necessary to suit your preference.
- Add Cheese to Crab Mixture: Stir in ¼ cup of shredded Gruyère and ¼ cup of shredded Cheddar cheese into the crab mixture until evenly combined.
- Butter the Bread: Spread softened butter on one side of each slice of sourdough bread to ensure a golden, crispy exterior when toasted.
- Toast First Side of Bread: Place two slices of bread in the hot skillet, buttered side down, to begin toasting the sandwich base.
- Add Cheese Layer: Evenly distribute the remaining ¼ cup of Gruyère cheese over the slices of bread in the skillet.
- Spread Crab Mixture: Spoon and spread the crab and cheese mixture evenly over the layer of Gruyère cheese on the bread.
- Add Final Cheese Layer: Sprinkle the remaining ¼ cup of Cheddar cheese evenly over the crab mixture to create a melty top layer inside the sandwich.
- Top with Bread Slices: Place the remaining two slices of bread on top, buttered side up, completing the sandwich stack.
- Cook First Side: Cook the sandwiches until the bottom slices of bread turn golden brown, which typically takes a few minutes.
- Flip and Cook Other Side: Carefully flip the sandwiches and cook until the other side is golden brown and the cheeses inside are melted thoroughly.
- Remove and Rest: Transfer the sandwiches from the skillet to a cutting board and let them rest for 1 to 2 minutes to allow the filling to set slightly and prevent burning.
- Serve: Slice each sandwich in half and serve immediately while warm and melty.
