Ingredients
Main Ingredients
- 2 tbsp avocado oil
- 1/2 yellow onion, diced
- 1 red pepper, diced small
- 2 cans corn, drained
- 4 oz can green chiles
- 1/2 tsp salt
- 1/2 tsp pepper
- 8 oz brick Neufchatel or 1/3 less fat cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1/2 cup hot honey
- 2 cups shredded Mexican cheese blend
- 1 cup crushed Frito scoops, plus more for serving
Instructions
- Preheat and Sauté Vegetables: Preheat your oven to 400°F. Heat a large saucepan over medium-high heat and add the avocado oil. Once the oil is hot, add the diced onions and red peppers, cooking them for about 2 minutes until they begin to soften.
- Roast Corn Mixture: Add the drained corn and green chilies to the pan. Cook for 8 to 10 minutes, stirring occasionally, until the corn is lightly browned and roasted. Season with salt and pepper. Then transfer the mixture to a bowl and allow it to cool for 10 minutes.
- Mix Dip Ingredients: Add the softened Neufchatel cream cheese and plain Greek yogurt to the cooled corn mixture. Stir until well combined. Next, blend in the hot honey and shredded Mexican cheese, mixing thoroughly to ensure everything is incorporated evenly.
- Assemble and Bake: Pour the cheese and corn mixture into a round 9-inch baking dish. Top the dip with crushed Frito scoops evenly. Place the dish in the preheated oven and bake for 30 minutes or until the dip is bubbly and the topping is slightly golden.
- Cool and Serve: Remove the dip from the oven and let it cool for 15 minutes to set. Serve warm with additional Fritos, chips, or toasted baguette slices for dipping.
Notes
- You can substitute Neufchatel cheese with regular cream cheese if desired, though Neufchatel has less fat.
- Adjust the amount of hot honey to tune the sweetness and spiciness to your preference.
- For a spicier kick, consider adding a pinch of cayenne pepper or extra green chilies.
- The dip can be prepared ahead of time, assembled, refrigerated, and baked just before serving.
- Ensure to let the dip cool slightly after baking to avoid burns and to let it set for easier scooping.
