Ingredients
Filling
- 2 cups cooked chicken, shredded or diced
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 3 tablespoons ranch seasoning, divided
- 2 tablespoons chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Dough and Topping
- 1 can refrigerated biscuit dough
- 2 tablespoons melted butter
- 1/2 cup shredded cheese for topping
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for an easy cleanup.
- Mix Filling Ingredients: In a mixing bowl, combine the cooked shredded chicken, softened cream cheese, shredded cheddar cheese, 2 tablespoons of ranch seasoning, chopped green onions, garlic powder, and black pepper. Stir until the mixture is smooth and well combined.
- Form Chicken Bombs: Flatten each refrigerated biscuit dough round into a circular shape. Spoon a generous amount of the chicken filling into the center of each dough circle. Carefully fold the edges up around the filling and pinch tightly to seal the biscuit fully, forming a 'bomb' shape.
- Arrange on Baking Sheet: Place the sealed chicken bombs seam-side down on the prepared parchment-lined baking sheet to prevent them from opening during baking.
- Prepare Topping and Brush: In a small bowl, mix the melted butter with the remaining 1 tablespoon of ranch seasoning. Brush this mixture over the tops of each chicken bomb, then sprinkle shredded cheese over them to add a golden, cheesy crust.
- Bake: Bake the chicken bombs in the preheated oven for 15 to 18 minutes, or until they are golden brown and the cheese is bubbling. Remove from the oven and let them cool slightly before serving to allow the filling to set.
Notes
- These chicken bombs can be assembled ahead of time and refrigerated until baking, making them great for meal prep or parties.
- They make perfect snacks for game day, after-school treats, or quick family dinners.
- Feel free to experiment with different cheese blends or add hot sauce to the filling for a spicy twist.
