Ingredients
Protein and Vegetables
- 1 cup diced boneless skinless chicken breasts
- 1/2 cup diced yellow onion
- 2 cloves garlic, minced
- 1 tsp minced fresh ginger
- 1 cup fresh pineapple chunks
- 3/4 cup frozen peas and carrots, thawed
- 2 green onions, diced
Oils and Sauces
- 2 Tbsp avocado oil (divided)
- 2 Tbsp reduced sodium soy sauce
- 1 Tbsp oyster sauce
- 1 tsp toasted sesame oil
Seasonings
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Staples
- 3 cups cooked jasmine rice (preferably leftover or day-old)
Instructions
- Cook Chicken: Heat a large skillet over medium-high heat and add 1 tablespoon of avocado oil. Add diced chicken breast seasoned with kosher salt and black pepper. Cook for 4-5 minutes, stirring occasionally, until the chicken is cooked through. Remove the chicken from the skillet and set aside without wiping the pan.
- Cook Aromatics and Veggies: Add the remaining tablespoon of avocado oil to the same skillet. Add diced yellow onion, minced garlic, and minced fresh ginger. Stir and cook for 2-3 minutes until fragrant and softened.
- Caramelize Pineapple: Push the onion mixture to one side of the skillet. Add fresh pineapple chunks and cook for 2-3 minutes until slightly caramelized and seared.
- Add Peas and Carrots: Stir in the thawed frozen peas and carrots. Cook for about 2 minutes, stirring often, until the vegetables are tender.
- Combine Chicken and Rice: Return the cooked chicken to the skillet. Add cooked jasmine rice and stir well to combine all ingredients evenly.
- Season the Rice: Pour in reduced sodium soy sauce, oyster sauce, and toasted sesame oil. Stir continuously to evenly distribute the sauces throughout the rice mixture. Cook for another 3-4 minutes until everything is heated through and well mixed.
- Garnish and Serve: Remove from heat and garnish with diced green onions. Serve the fried rice hot for a delicious and balanced meal.
Notes
- Using day-old or leftover jasmine rice helps prevent the fried rice from becoming mushy.
- Adjust soy sauce and oyster sauce quantities according to taste and dietary preferences.
- For added heat, consider adding a pinch of red pepper flakes or sriracha.
- Ensure the skillet is hot enough before adding ingredients to achieve good caramelization and proper texture.
- This dish can be customized by adding other vegetables like bell peppers or snap peas.
